Chicken Florentine

This recipe was made for my 2007 Holiday Party featuring an Italian inspired menu. You can read about it and view the additional recipes I made for this event HERE.

Chicken Florentine
3 lbs chicken tenders
3 cloves garlic, minced
1 large onion, chopped
1 bag fresh spinach
olive oil
italian seasoning, salt & pepper
1 cup shredded parmesan or mozzarella cheese.
1 tomato, diced

Preheat oven to 350.
In a pan, saute garlic, onions and spinach in olive oil.
Once spinach has wilted, place mixture in oven proof serving dish
Place chicken on a baking sheet and seasoning to taste.
Bake uncovered in preheated oven for 12-15 minutes.
Remove from baking sheet and place on top of spinach.
sprinkle shredded parmesan or mozzarella cheese over chicken.
Return to oven again and bake for 10 minutes until cheese has melted.
Top with fresh diced tomatoes.
