Potato Chips with my Japanese Turning Slicer

A few weeks ago, my husband and I had dinner at our favorite local sushi restaurant. While there, we sat at our fave seat in the upper balcony of the restaurant, overlooking the sushi chefs as they prepare various rolls. One item that particularly interested me was their beautiful garnishes. The sushi chefs had a large bowl of raw beets and carrots cut into delicate and colorful strings. They used these vegetable strings as garnish to all the platters of sushi they prepared. I knew before we left that night I just had to ask about how they made these strings.... and the sushi chef was so kind to tell me that they used a Japanese turning slicer.


I just had to get my hands on one so I could create some strings of vegetables! I researched and asked around among my foodie circles until success! My husband and I came across them at our favorite asian market, thanks to my friend Colleen, author of The Mere Mortal's Guide to Fine Dining. She tipped me off to check at our fave market and there is was in all it's glory!

I soon learned that this tool has been used by contestants on Top Chef and was thrilled to have it in my kitchen too! This turning slicer is used for making spiraling fine cut carrots, potato strings, beets, daikon radishes or cucumbers and more. It comes with 4 stainless steel, interchangeable blades (slice blade, and fine, medium & coarse blades) to make different sizes and cuts for different foods.


One of the things I've already made using my turning slicer is potato chips! This tool makes it super easy to have curly potato spirals or even slices... all within a matter of seconds. To make, I just attached the potato into the slicer, turn the crank and drop the spiral sliced potatoes into hot oil to fry. I double fried them in small batches to they came out crispy. After the second fry, a simple seasoning of garlic salt was all that was needed before enjoying!

Stay tuned to more things I'll be doing with my new kitchen toy! It certainly makes cooking with vegetables fun and interesting!

Valentines Day Comes Early

I'm going to preface this by saying that I'm not big on celebrating Valentines day. In fact, I'm not really the romantic type of gal. My husband is far more romantic and sentimental than I am.

This couldn't be more evident than on our wedding day when he poured his heart out with his personal wedding vows. He had everyone crying... even our officiant. Then it was my turn. My vows came out like a muffled contract (being that I'm quite the corporate and semi-rigid type) but I was so taken with emotion from his vows, I don't think anything I said was audible. Even worse, when I was done mumbling between tears after my personal vows, I just handed him his wedding band since I couldn't even compose myself to slip it on his finger! Horrible, I know...

So back to Valentine's Day, I assumed that my husband would be working so I didn't have any fancy romantic plans in store for the weekend. It wasn't until the other night, my husband asks me what our Valentine's day plans are. It appears that he went ahead and requested that day off from work so he could spend some quality time with me. *blush*

And if that wasn't enough, when I got home tonight, he surprised me with something wonderful....
I guess I better think of something special to treat this loving and generous husband of mine. Maybe something made with my new food processor? Hope you have some quality time with loved ones this weekend!

A Thousand Done, Another Thousand to Go...

Wow. Just wow.

I'm in awe that this is the 1000th blog post I have made since I created Joelen's Culinary Adventures back in January 30, 2007. Who knew that I would have made it this far?! Ringing in the New Year with a Winner!

Happy Happy New Year! I hope you had a fun time celebrating the new year of 2009 with loved ones! For us it was pretty low key, intimate and cozy in our pajamas. Dinner wasn't anything fancy schmancy... but we enjoyed a fabulous artisanal cheese platter, fruit, salame and king crab legs with drawn butter. Oh, and we didn't forget a nice chilled bottle of bubbly!

Almond Joy Biscotti

This is a recipe I made for my husband's coworkers to share on Christmas Eve. What I like about this is that it incorporates all the flavors of the candy bar, packed into a perfect little dunker for coffee and/or hot chocolate!

The recipe I used was my go to recipe from Joy of Baking. I took the base recipe and added sweetened shredded coconut, almond slices and chocolate chips. I wanted to dip these in melted chocolate but because they were already pretty chocolatey, I left them as is.

Almond Joy Biscotti
recipe adapted from Joy of Baking

1 teaspoon baking powder
1/8 teaspoon salt
2 cups all purpose flour
3/4 cup granulated white sugar
3 large eggs
1 1/2 teaspoon pure vanilla extract
1/4 cup sweetened shredded coconut
1/4 cup almond slices, toasted
1/4 cup chocolate chips

Preheat oven to 300 degrees F and line a baking sheet with parchment paper.

In a small bowl lightly beat the eggs and extracts together. Set aside.

In a bowl of your stand mixer (or with a hand mixer) combine the flour, sugar, baking powder and salt. Beat until blended (about 30 seconds). Gradually add the egg mixture and beat until a dough forms, adding the coconut, almonds and chocolate chips about halfway through. With floured hands divide dough in half. On a lightly floured surface roll dough into a log about 10 inches long and 3 inches wide. Transfer log to the prepared baking sheet and bake for 35-40 minutes, or until firm to the touch. Note - logs will spread during baking. Remove from oven and let cool on a wire rack for about 10 minutes.

Transfer log to a cutting board and using a serrated knife, cut log into slices 1/2 inch thick on the diagonal. Arrange evenly on baking sheet. Bake 10 minutes, turn slices over, and bake another 10 minutes or until firm to the touch. Remove from oven and let cool.

If you wanted to dip them in chocolate....

While biscotti is cooling, place 1-2 squares of chocolate almond bark in a mug and melt in the microwave until melted smooth (about 1 minute to 1 1/2 minutes).

Dip 1/3 or 1/2 of the biscotti into the melted chocolate and place on parchment to cool and harden.

Biscotti Bonanza!

Unfortunately, my husband has to work tomorrow on Christmas Eve. I decided to bake a few things today that he could take in tomorrow to share with his staff. I absolutely love baking and cooking for his staff at work. It allows me the opportunity to try new recipes and share them with others. (I especially like the fact we don't have all these sweet temptations around at home where I could easily indulge and regret it all later!)

With some random baking ingredients on hand, I decided to make various kinds biscotti for them to enjoy. These are great to make since the recipe doesn't call for any butter and uses pantry staples. Biscotti are great gifting goodies because they have a long shelf life and sturdy enough to package up. Here's the biscotti line up I making (click the links for the recipes!):

Season's Eatings from Spain!


Fellow blogger, Katie of Thyme For Cooking has hosted a fun foodie swap called Season's Eatings for the holidays. I participated in this and my package of goodies arrived today... from Barcelona Spain!

A heart felt 'Thank You!' goes out to Nuria of Spanish Recipes for her wonderful and tasty package. I'm so psyched with the goodies I received:

White Beans
Nuria picked this up from her local Farmer's Market. She says they've been harvested recently and are famous in Spain for their fine and tender texture when cooked.
Ceps: A type of mushroom which are great with meat, omelettes and rice.
Noras: This is a small dry pepper that is used in sauces, stews and with legumes.
Saffron
A great spice, especially coming straight from Spain... and is essential in paella!

If you have any recipes using the above ingredients, I'd love to hear about them! I know Nuria has quite a few in her blog that I hope to try soon!

Mama Got Her Mojo...

Once again, my fabulous friend, Jessy, has done it again! Today I received a lovely package of amazing Florida food finds. This time it had a caribbean feel with the goodies she sent including:

Homage to My Papaya Friend...

My friend Steph and I met online. A few months later, she came to visit with her husband. Four months after that, we went on a long weekend girls getaway. And since then, we've been there for each other through some very trying times and shared our moments of joy. Currently Steph's known as my "papaya friend" since she's expecting and the baby is about the size of a papaya! We have about 5-6 hours drive between us but each month we send packages of fun goodies to make up for not being there in person.

So today happened to be one of those fabulous days I came home to a package sent by Steph. She sent me the Winerd board game I've been eyeing for while (personal tidbit: I collect and enjoy board games that are food related!) and she also sent me a cookbook I've thought about purchasing myself.

This post is dedicated to Steph and in honor of her and our friendship, I made a recipe from the cookbook she sent me, The New Best Recipe. What recipe did I choose? Well, Blackberry & Lemon Cream Scones of course! Thank you Steph for being such a great friend :)

I took the book's recipe for Cream Scones and put my twist on it by adding fresh blackberries and lemon zest. The end result was a light, fluffy, creamy and perfect scone bursting with blackberries and a nice hint of lemon.

Here's my adapted recipe for Blackberry & Lemon Cream Scones, inspired by Cook's Illustrated's The New Best Recipe: 2 cups (10 oz) unbleached all purpose flour
1 tablespoon baking powder
3 tablespoons sugar
1/2 teaspoon salt
5 tablespoons cold unsalted butter, cut into 1/4 inch cubes
2 teaspoons lemon zest
3/4 cup fresh blackberries, halved
1 cup heavy cream

1. Adjust an oven rack to the middle position and heat the oven to 425 degrees.

2. Place the flour, baking powder, sugar and salt in a large bowl. Whisk together.

3. Using a pastry blender or your fingertips, quickly cut in the butter until the mixture resembles coarse meal with a few slightly larger butter lumps.

4. Add lemon zest and stir until thoroughly incorporated.

5. Stir in the heavy cream with a rubber spatula or fork until the dough begins to form, about 30 seconds.

6. Add the halved blackberries (or whole if they are small) and gently fold into the dough so that the blackberries are evenly distributed throughout.

7. Gather the dough and all dry flour bits and press the dough into an 8 inch cake pan, then turn the dough out onto a lightly floured work surface. With a sharp knife or bench scraper, cut the dough into 8 wedges.

8 Bake until the scone tops are light brown, 12 to 15 minutes. Cool on a wire rack for at least 10 minutes. Serve warm or at room temperature.

Florida Sunshine in a Box #2!

I think my friends are really tempting me to move to Florida asap! This afternoon we were surprised with a fabulous delivery of Florida goodies from my friend, Karen of Loves To Eat Weblog. (Please check out her awesome blog full of great eats!) Karen and her husband are kind & genuine folks, extremely fun to hang out with and we're hoping they will come visit us in Chicago soon! Until then, we have these fabulous Florida goodies to remind us of the sun and sand we left behind a month ago. Karen sent us this great package from Island Grove that included:
Florida Orange Poppy dressing
Hurricane Bay marinade
Old Southern Dixie BBQ sauce
Tropical Salsa
Key Lime Juice
Carribbean Bay hot sauce
Key Lime Margarita mix

Thank you so much Karen & Mike! I plan on having a "Carribbean" inspired dinner next month and these will be great to work into my menu! **hugs**

Swamp Dusted Ribs

So what's for dinner? How about a taste of the swamp? A couple months ago I celebrated my birthday. One of the gifts I received was a homemade spice mix called, "Swamp Dust." In fact, my friend Marlou and her husband Bill made this mix and I was waiting for the right time to use it. Today just happened to be the day!

The "Swamp Dust" they made consisted of the following: Salt, Basil, Thyme, Oregano, Tarragon, Rosemary, Chile Powder, Black Pepper, Ground Garlic, Onion Powder, and Crushed Red Pepper.

Because we didn't have BBQ ribs on July 4th at my husband's request, I figured we could end the holiday weekend with them. I used this "Swamp Dust" spice mixture as a rub for a rack of pork ribs. In fact, I prefer making ribs one way... the way that requires the least amount of effort! Here's my preferred way of preparing ribs:

pork ribs (baby back, St. Louis style, whatever you like)
spice mix of your choice (homemade or store bought: I used my "Swamp Dust")
foil

To prepare your ribs, lay out a piece of foil, large enough to wrap your ribs in.
Place your ribs on the foil and generously cover the ribs with the spice mix until its completely coated.
Fold the foil over the ribs and wrap tightly.
You can let your ribs chill for a few hours or as long as overnight.
When you're ready, you can throw the foil packet of ribs right on the grill or place on a baking sheet and bake. Either way, the heat should be low (300-325 degrees) and you should plan on cooking it for 2-3 hours. (Low & slow is key!)
For those that like BBQ sauce, baste the ribs with your preferred BBQ and broil or grill for a few minutes until its caramelized to your preference. The end result?... Flavorful & tender ribs!

To accompany our Swamp Dusted Ribs, I whipped up a quick Cilantro Butter (1 tablespoon finely chopped cilantro, 2 tablespoon unsalted, room temp butter, pinch of garlic powder, pinch of onion powder, salt & pepper to taste - combine) and I finally made the ever-popular Hot Crashed Potatoes of The Pioneer Woman Cooks. This recipe gave me the, "Hey, why didn't I think of that?!" feeling because it's so easy and delicious. Here's the recipe for Pioneer Woman's Hot Crashed Potatoes:

New Potatoes (or other small, round potato)
Olive Oil
Kosher Salt
Black Pepper
whatever herb you like (I used garlic & onion powder)

Begin by bringing a pot of salted water to a boil.
Add in as many potatoes as you wish to make, and cook them until they’re fork-tender.
Next, generously drizzle olive oil on a sheet pan.
When the potatoes are tender, place them on the cookie sheet…
…Giving them plenty of room to spread out.
Next, grab your potato masher and gently press down on the potato until it slightly mashes…
Then rotate the masher 90 degrees and finish flattening it. Of course, you don’t want to absolutely smash it into the pan—you want it almost to resemble a cookie. Repeat until all are flattened.
Next, brush the tops rather generously with olive oil.
Next, grab some Kosher salt. You can use regular salt, but I’d really recommend using kosher. It adheres to the potatoes more easily and really flavors them nicely without getting too salty.
Be ye ever as generous with fresh ground black pepper.
Now, you can grab some chives…or thyme…or whatever herbs you have available.
Whatever herb you use, just chop it pretty finely and sprinkle over the top.
Now throw them onto the top rack of a very hot (450-degree) oven, and cook them for 20-25 minutes…
…Or until they’re golden and crispy and sizzling.

And to make them even better, I topped the potatoes with the remaining nacho cheese sauce I had left, garnished with some sliced green onions. It really paired well with the southwestern flavors of the ribs & cilantro corn!

Florida Sunshine in a Box!

Even after a month, I'm still longing to go back to Orlando. Aside from the sun and sand, there's my sister in law (who I miss dearly) and some special friends. One couple, Jessy & Kevin, are especially some folks we miss hanging out with. In fact, you should definitely check out Jessy's amazing food blog!

After a long day at work, I arrived home to a fabulous box full of sunshine! It couldn't have come at a better time since I've been craving Jessy's Key Lime Pie since the day we last saw them. (She made an amazing key lime pie for us and I'm STILL waiting for the recipe! - Jessy... give it up girl, give it up!)

Thank you so much Jessy & Kevin! We miss you and hope to see you again in the coming months. Until then, I'm going to be making some dishes using these ingredients and I hope I can do these fabulous Florida goodies some justice!

Flavorful Sliders and Tasty Fries

Tonight for dinner, I had planned on making a cinnamon chipotle chicken taco salad. But after my recent burger event, I had quite a few buns leftover that I wanted to use. So we ended up having cinnamon chipotle chicken sliders with truffle fries.
As for recipes, I really owe it to the 2 food products that made the meal. McCormick brand recently made a few new rubs and spices, one of which I tried out today. Their Cinnamon Chipotle Rub sounds interesting to begin with but the flavor is amazing. To prepare my chicken, I sprinkled some of the rub on 2 boneless chicken breasts with a touch of extra virgin olive oil. I marinated the chicken overnight so that the flavors would really shine through. I then grilled the chicken, cut in half and served them on dinner rolls (think sliders). Topped with a slice of colby jack and some lettuce, dinner was set. The chicken was so flavorful I didn't need any additional toppings. You can purchase McCormick's Cinnamon Chipotle rub at local supermarkets nationwide.

To accompany my sliders, I quickly deep fried some crinkle fries and used a special White Truffle Salt to season. A little goes a long way with this salt and wow... the flavor is amazing. This salt was the only reason I purchased frozen french fries (which I rarely buy - and I'm too lazy these days to make fries from scratch). You can purchase this White Truffle Salt through my favorite spice place, The Spice House.

A French Surprise Package!

As I'm working here at home, the doorbell rings and a surprise comes for me! Leave it to my friend Stephanie to send me some fabulous foodstuff... she's a special person and great friend who I've grown close with the past year. It's just too bad that she lives several hours drive away, however the monthly special packages we send makes us feel closer to each other.

Her surprise package for me was a fabulously French basket of goodies. Aside from the beautiful wicker basket packaging, inside were some wonderful food items including Shallots Confit, French Mustard, Fig & Walnuts Confit, Olive Tapenade, Sesame Crackers, Spreader, cute Rooster themed tea towel and a French red wine (Le Vieille Ferme). This was absolutely a gorgeous surprise and a big thank you and hug to Stephanie!

I'm looking forward to enjoying this on the grassy lawn of Millenium Park while listening to the Grant Park Symphony practice/play....

Spicing It Up!

Spices are a great way to add flavor to dishes. In honor of the power of spices, I took my group on a Spice Tour at the The Spice House, a wonderful spice shop owned by Tom & Patty Erd. If you're familiar with Penzey's spices, Patty Erd is the daughter of Bill Penzey Sr.! You can read about their history in the spice industry here. For this culinary adventure, my group received a wonderful presentation on spices. We learned the origins of common spices including vanilla, nutmeg, peppercorns, saffron, ginger just to name a few. After their presentation, we got to browse their shop and indulge in the amazing aromas and textures. Here are pictures of the great purchases I made...

Grains of Paradise
This was in a goodie bag given to all of us at the tour by Tom & Patty.
Interestingly enough, Alton Brown is an avid user of this product
and he can be seen using this specific spice in his pickling & brining show!
Red & Black Hawaiian Sea Salts
I purchased these for some dishes I plan on making in the future for some summer parties I have lined up. These are great finishing salts and are ideal for making kalua pork. The red salt is milder than the black but both offer some great flavors and aromas.

Crystallized Ginger
This was another treat in our goodie bag, We learned quite a bit about ginger and how it was used in history. It's a great thing to take for stomach aches and mild sicknesses.

Chinese Five Spice Powder
Since I love cooking asian inspired dishes, I was running low on this spice so I picked some up. I'm anxious to use this in some of my dishes including Chinese BBQ pork ribs!

King Creole Seasoning
Another goodie bag item, this seasoning mix is great for a little heat. One of the things I plan on making in a couple of weeks is a good hearty jambalaya... so this will come in handy!

Chesapeake Bay Seasoning
I'm hosting a seafood boil next month for a wine tasting event and this caught my eye. Rather than the usual Old Bay seasoning commonly used for seafood boils, I plan on using this for added flavor.

Chai
No more powdered chai mixes for me! I had a cup of chai using this mix and wow! It was fabulous and I'll never go back to those premade mixes again. The flavor was complex, rich and well, the way chai is meant to taste.
