Grilled Pizza for dinner…

The first time I tried grilling pizza was when we were in Toronto visiting my family.  It was something we had all wanted to try but had just never gotten around to doing it. So out I went and bought some grocery store pizza dough (divide it into 4 servings when you get it home) and some fresh and yummy toppings and into the world of pizza grilling we dove!

Our biggest concern was that the dough would drip through the grill plates but it cooks up so quickly that there is no real worry to it.  You need to have your grill heated up to about 350F to crisp it quickly.

The trick, I think, to this is to have all of your toppings ready to go on and to not overload the pizza.  You do need to work fast once the bottom which becomes the top is grilled nice and crispy.  We did individual ones for ease of preparation and they worked perfect.  No problem flipping etc…

The second time we made them was here at home and I used my bread machine pizza dough recipe.  We divided this one into 4 to make 4 individual pizzas for us.  This worked perfectly as well and was a bit easier to stretch and shape then the grocery store one…

Black Bean Hummus…

I was hunting around the other day waiting to pick the girls up and I stumbled across a recipe for Black Bean Hummus.  Turns out a friend of mine has also been requesting a recipe from me for hummus.  I gave her my original one that is here, but this black bean one sounded really good to me and i couldn’t get it out of my head.  I love black beans and who doesn’t love a nice garlicky hummus???

This came together in a matter of minutes in my food processor.  I think stirring up the tahini took more time the the recipe!

Black Bean Hummus (from All Recipes)

Ingredients:

1 clove garlic
1 (15 ounce) can black beans; drain and reserve liquid
2 tablespoons lemon juice
1 1/2 tablespoons tahini
3/4 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
10 Greek olives

Instructions:

  • Mince garlic in the bowl of a food processor.
  • Add black beans, 2 tablespoons reserved liquid, 2 tablespoons lemon juice, tahini, 1/2 teaspoon cumin, 1/2 teaspoon salt, and 1/8 teaspoon cayenne pepper; process until smooth, scraping down the sides as needed.
  • Add additional seasoning and liquid to taste.
  • Garnish with paprika and Greek olives.

***I calculated this for WW as 2 points for a 1/4 cup serving…that’s not including the yummy pita that you HAVE to have with it!

Homemade Caesar Salad

I am a huge fan of Caesar Salads.  When hubby had a restaurant I think that I lived on the Caesar salad that was topped with blackened shrimp.  Since the restaurant has gone I have desperately been in search of a Caesar Salad fix.  This has been going on for about 8 years…:(

Then the other night we were watching TV and there seemed to be nothing on.  Turned on the Food Network and started watching “The Best Thing I Ever Ate” and Alex was talking about her favorite Caesar Salad from a Steakhouse somewhere.  Can’t really remember all the details because I was totally and one hundred percent lost once I saw the tableside Caesar being made.  At that moment I just knew it had been way too long since I had had a perfect Caesar.

Homemade Caesar Salad

Ingredients:

1/2 head of chopped romaine lettuce
1 egg yolk (the egg is raw, I like to use cage free, hormone free and antibiotic free eggs when I am eating them raw)
ground pepper to taste
1/2 tsp dry mustard powder
2 tsp chopped anchovy
2 tsp garlic, minced
1/2 tsp Extra Virgin Olive Oil
2 tsp Worcestershire Sauce
1/4 cup Parmesan Cheese, grated
1-1/2 tsp fresh squeezed lemon juice

Directions:

  1. Clean lettuce thoroughly and dry in a salad spinner or in towels. Refrigerate until crisp, at least 1 hour or more.
  2. In a jar combine egg yolk, pepper, mustard, anchovy, garlic, olive oil, Worcestershire sauce, lemon juice, and 2 Tbsp of the Parmesan cheese. Whisk until well blended.
  3. To assemble, place torn lettuce leaves in a large bowl. Pour dressing over the top and toss until well coated. Add the remaining Parmesan cheese.  Serve immediately!

This Caesar Salad was perfect.  Lots of garlic and lemon.  Just the way I like it!  Hubby loves his with some bacon added in.  Tailor this to your taste but definitely try it!

And here is the real kicker…this is only 5 WW Points!!!!

Tilapia DeJonghe

Tilapia DeJonghe
(a twist on the traditional Shrimp DeJonghe)
adapted from THIS recipe
2 lbs tilapia fillets
1 cup dry white wine
1 cup butter, melted
2 cloves garlic, minced
1 pinch ground cayenne pepper
1/2 teaspoon paprika
1 cup chopped fresh parsley
2 cups fresh bread crumbs

Preheat oven to 350 degrees F (175 degrees C).
Lightly grease an 11x 13 inch casserole dish.
Place tilapia evenly in the casserole dish. Pour wine over the tilapia.
Mix together butter, garlic, cayenne pepper, paprika, parsley and bread crumbs.
Sprinkle bread crumb mixture over the shrimp. Refrigerate now if desired.
Bake in preheated oven for 20 minutes, or until tilapia is firm and topping is golden brown. Serve immediately.

Warm Garlicky Spinach Artichoke Dip


Warm Garlicky Spinach Artichoke Dip

1 cup frozen artichoke hearts, defrosted
1 10oz package frozen spinach, defrosted
2 cloves fresh garlic, minced
salt & pepper to taste
garlic powder
onion powder
1 brick cream cheese, softened
1 cup mayonnaise
1 cup sour cream
1 1/2 cup italian cheese blend

Combine all the ingredients above and mix thoroughly.
Place in baking dish and bake for 20-25 minutes until warmed and bubbly OR place in mini crockpot to keep warm.
** I made this a day in advance and replenished my mini crockpot as needed.


Spinach & Artichoke Appetizer Wreath

Spinach & Artichoke Appetizer Wreath

2 (8 ounce) packages refrigerated crescent dinner rolls
1 (14 ounce) can water-packed artichoke hearts, drained & chopped
1 (10 ounce) package frozen chopped spinach, thawed and well drained
1 cup shredded mozzarella cheese
1/2 cup shredded parmesan cheese
1/2 cup diced bell pepper
1/3 cup mayonnaise
1 garlic clove, minced
1/4 teaspoon fresh ground black pepper
1 egg white, lightly beaten
2 tablespoons grated parmesan cheesePreheat oven to 375*F. In bowl, combine artichokes, spinach, mozzarella cheese, feta cheese(or Parmesan, red bell pepper, mayonnaise, garlic and black pepper. Mix well. Set aside.

Unroll the 2 packages of crescent rolls onto work surface. Separate into 16 triangles in a circle on a large round pizza pan(or baking stone) with wide ends 3" from edge of pan and points towards the outside. Points will extend off the edge of the baking stone or pan(depending on size).


Arrange remaining triangles in center of baking stone or pan; matching wide ends with triangles already in place Points will overlap in the center.


Using rolling pin, roll over seams of triangles where the wide ends meet, creating a smooth surface for filling. Do not seal center triangles.


Using an ice cream scoop, scoop filling evenly over dough in a continuous circle.


Beginning with the last triangle placed in center of baking stone or pan, bring point of triangle straight across filling.


Next, bring point of opposite outside triangle diagonally across point of previous triangle. The filling will show.


Repeat, overlapping points of inside and outside triangles to form a wreath. Tuck last end under first.


Brush top of wreath with egg white. Sprinkle with grated Parmesan cheese.
Bake 25-30 minutes or until golden brown.

Holiday Veggie Appetizer Wreath

1 pkg. (340g) refrigerated flaky rolls
1 container (250g) chive and onion soft cream cheese
1 garlic clove, pressed
1 tsp. dried dill weed
1 C. broccoli, chopped
1/2 C. cucumber
2 medium plum tomatoes, seeded and choppedPreheat oven to 400°F. Separate rolls horizontally in half to form 20 rolls. In center of a round stone, arrange 6 rolls in a circle and add 1 in center with edges touching, in another circle around ring of rolls.

Using lightly floured pizza roller, flatten and roll rolls together to seal, leaving outside edges scalloped for petal effect. Bake 11-13 minutes or golden brown. Cool 1 minute; carefully loosen and slide onto cooling rack it cool.

In a bowl, combine cream cheese, garlic and dill weed.

Score cucumber lengthwise; remove seeds. Slice cucumber; cut slices into quarters. Chop tomato.

Return crust to crust to cooled stone; spread evenly with cream cheese mixture. Sprinkle with broccoli, cucumber and tomato. Arrange 3 seeded and scored cucumber slices at top to create bow effect, if desired pull rolls apart. Yields 20 servings.

Italian chicken bruschetta soup

Joelen's Italian chicken bruschetta soup
1 large can marinara sauce
1 large can whole tomatoes w/basil
3 tomatoes, chopped and seeded
1 bunch fresh basil leaves, chopped
1 onion, finely minced
3 cloves garlic, minced
2 cup low sodium chicken broth
3 boneless, skinless chicken breasted, diced
1-2 tablespoons italian seasoning
1 cup grated parmesan cheese
salt & pepper to taste
1 cup cooked small pasta (optional)

Combine everything (except pasta) in the crockpot and set on low for 6-8 hours.
Before serving, stir in cooked pasta.

Smashed potato soup

Tricia's smashed potato soup
3-1/2 pounds potatoes, peeled and cut into 3/4-inch cubes
1/2 cup chopped yellow and/or red sweet pepper
1-1/2 teaspoons bottled roasted garlic
1/2 teaspoon ground black pepper
4-1/2 cups chicken broth
1/2 cup whipping cream, half-and-half, or light cream
1 cup shredded cheddar cheese (4 ounces)
1/2 cup thinly sliced green onions
Sliced green onions (optional)

In a 4- to 6-quart slow cooker, combine potatoes, sweet pepper, garlic, and black pepper. Pour broth over all.

Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.

Mash potatoes slightly with a potato masher. Stir in whipping cream, cheddar cheese, and the 1/2 cup thinly sliced green onions. If desired, top individual servings with additional sliced green onions. Makes 8 servings.

Roasted tomato soup

3 cups chicken broth or vegetable stock
1 tablespoon unsalted butter
1 tablespoon sugar
1 onion, diced small
4 cloves garlic, minced
2 cups slow-roasted tomatoes
½ cup half ‘n’ half
Salt & pepper to taste

Bring broth to boil in the microwave.

Meanwhile, melt butter in a Dutch oven over medium heat. Add sugar, onion and garlic and sauté until softened but not browning. Stir in the slow-roasted tomatoes and hot broth and return to a boil. Add half ‘n’ half and rewarm but do not allow to boil.

Spicy vegetarian chili

Betsy's spicy vegetarian chili
1 teaspoon olive oil
2 medium onions, chopped
1 medium green pepper, chopped
1 medium red pepper, chopped
3 garlic cloves, minced
2 cups black beans, cooked
1 can diced tomatoes
1 cup salsa, medium
1/2 cup water
1 tablespoon chili powder
1 teaspoon dried basil
1/2 teaspoon ground pepper
1/2 teaspoon oregano
1/2 teaspoon cumin
1/4 teaspoon cayenne
1 teaspoon sugar
1 cup canned corn niblet

Heat oil in a large pot, saute onions, peppers and garilc for 5 minutes on medium heat.
Add remaining ingredients except corn.
Increase heat to high to bring to a boil.
Decrease heat to medium and simmer, covered, for 25 minutes, stirring occasionally.
Stir in corn, simmer until heated through.
Makes about 10 cups or 6-7 servings of 1 1/2 cups.

Sauteed Spinach with Bacon

1-2 packages fresh baby spinach leaves
5 slices canadian bacon, diced
3 cloves garlic, sliced
2-3 tablespoons butter
salt & pepper to taste
1/2 cup low sodium chicken broth

In a saute pan, melt butter and saute garlic and bacon.
When bacon is crisp, add chicken broth and spinach; toss until it wilts.
Serve immediately.

Spicy Garlic Mashed Potatoes

Spicy Garlic Mashed Potatoes
original Joelen recipe

1 head garlic, cut in half horizontally
olive oil for drizzling
salt & pepper to taste
1-2 tablespoons spice garlic & onion seasoning
2-3 large Russet baking potatoes
2 tablespoons butter
1/2 cup half & half

Preheat oven to 350 degrees.
Tear off a sheet of foil (about 8x12 inches).
Place garlic halves onto the foil.
Drizzle with olive oil and season with salt & pepper.
Wrap the garlic & jalepenos into a foil packet and place in preheated oven.
Bake for 30 - 45 minutes; set aside to cool.
Meanwhile, boil a pot of water and add chopped potatoes.
Cook potatoes until softened and drain.
Place potatoes into a large bowl.
Add butter, half & half, salt & pepper to taste.
When cooled, squeeze garlic out of paper wrappings and place into large bowl.
Mash potatoes with all ingredients until you reach your desired consistency.
Add more butter/half & half if preferred.
Garnish with chopped chives before serving.

Mexican: Light & Refreshing

For dinner tonight, a friend came over to catch up on girltime. I prepared a quick dinner that was light, flavorful and used what I had on hand, since the hubby to the car to work today. (And it was a perfect chance to cook beef for myself since my hubby doesn't eat beef!) With that said, here's what I came up with and was pleasantly surprised what a little creativity can do!

Mexican Steak "Pitzas" with Cilantro Cream
1 lb beef flank steak, finely chopped
1/2 large onion, finely diced
2 cloves garlic, minced
1 tablespoon southwest seasoning
1 teaspoon Sazon con Cilantro seasoning
salt & pepper to taste
1/2 tablespoon canola oil for cooking
4 gyro pitas
1/2 cup shredded mexican blend cheese
1/2 finely diced tomatoes
2 tablespoons finely chopped fresh cilantro
1/4 cup low fat sour cream
2-3 tablespoons water

- Preheat oven to 375 degrees.
- In a skillet over medium high heat, add the cooking oil, onions and garlic; saute until softened.
- Add the beef and seasonings and cook until browned.
- Meanwhile, place your gyro pitas on a parchment lined baking sheet and bake in the preheated oven for 5 minutes to soften the pitas. Remove the pitas from the oven and set aside.
- When the beef has cooked thoroughly, carefully spoon the beef over the warmed pitas to cover completely.
- Top the beef with the shredded cheese and bake in the oven for 5-10 minutes until cheese has melted.
- While the pitas are baking, prepare the cilantro cream by combining the cilantro, sour cream and water. Season with salt & pepper to taste.
- When the pitas are done baking, remove from the oven and top with the cilantro cream and chopped tomatoes; serve.
Tex Mex Quinoa Salad
1 cup dry quinoa
2 cups low sodium chicken broth
1 chicken breast, boiled and chopped
1/2 cup chopped tomatoes
1 stalk green onion, sliced
2 japelenos, finely diced
1 can sweet kernel corn, drained
1 can black beans, rinsed & drained
1/2 cup lime juice
1/4 cup good quality extra virgin olive oil
salt & pepper to taste

In a small sauce pan over medium heat, add the quinoa and chicken broth. Cook until done and set aside.
Meanwhile, add the remaining ingredients in a large bowl and toss.
Add the slightly cooled quinoa to the bowl and toss
Season with salt & pepper to your taste.

WW: Eggplant Rollatini with Tomato Basil Sauce

For dinner tonight, I had a special guest over... my 6 year old nephew. To keep things healthy yet kid friendly, I made something similar to a lasagna (a favorite of my nephew's) - Eggplant Rollatini. Little did he know that it was completely vegetarian! I served this with a baked bone-in chicken breast, seasoned with italian seasoning. Thankfully it was a hit and he enjoyed it... so did the rest of the family.

*Tip: You could make this in advance and is freezeable too, just like a traditional lasagna!

Eggplant Rollatini with Tomato Basil Sauce

1 medium eggplant, unpeeled, cut lengthwise into 8 (1/4 inch slices)
1 teaspoon olive oil
3 garlic cloves, chopped
2 cup canned crushed tomatoes
4 tablespoons chopped fresh basil
1 small zucchini, diced
1/4 cup minced onion
1/2 cup part skim ricotta cheese
1/2 cup chopped fresh parsley
1 large egg
3 tablespoons grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon black pepper

Preheat the oven to 450F degrees. Spray a large rimmed baking sheet with nonstick spray. Arrange the eggplant on the baking sheet in one layer and spray lightly with nonstick spray. Bake until browned, about 10 minutes on each side. Reduce the oven temperature to 400F degrees.

To make the sauce, heat the oil in a medium saucepan over medium hat. Add 2 cloves of the garlic and cook, stirring occassionall, until fragrant. about 30 seconds. Add the tomatoes and 2 tablespoons of the basil; bring to a simmer. Cook until thickened, 10 minutes.

To make the filling, spray a large nonstick skillet with nonstick spray and place over medium-high heat. Add the zucchini, onion, and remaining 1 garlic clove; cook until the vegetables are softened, 5 minutes. Transfer to a medium bowl; allow to cool slightly. Stire in the ricotta, parsley, egg, remaining tablespoons basil, 2 tablespoons of the Parmesan, the salt and pepper.

To assemble the rollatini, spray a 1 1/2 quart baking dish with nonstick spray. Spread 3 tablespoons of sauce in the dish. Place 2 tablespoons of the filling at one end of each eggplant slice. Beginning at the filled end, roll up the eggplant slices and place, seam side down, ina single layer in the baking dish. Spoon the remaining sauce over the rollatinil sprinkle with the remaining 1 tablespoon Parmesan. Bake until heated through completely, about 25 minutes.

Serves 4

Feasting on Fall Flavors

Tonight called for a dinner that would warm us from the crisp and cool temps in the air. I figured now was a good time as any to prepare a fall dinner to highlight the season's flavors. With apples, thyme, maple syrup, and sweet potatoes on hand, we thoroughly enjoyed the bounty that graced our table. I didn't use any particular recipe but rather, used the ingredients in my pantry to come up with a meal. Bare with me as I share what I did to create our dinner...

Roasted Maple Sugar Pork Tenderloin
This past Sunday I visited my favorite spice shop, The Spice House, and picked up a new seasoning to try. Their "Gateway to the North Maple Sugar Seasoning" was perfect with pork with hints a sweet and savory flavor. To prepare my pork tenderloin, I generously coated them with this seasoning... and roasted them on top of a bed of chopped apples, onions, a few garlic cloves and added a couple bay leaves and springs of thyme. After baking covered in a 350 degree oven for an hour, remove the pork from the apple/onion mixture and pace on a separate baking sheet.

Savory Applesauce
With a roasting pan of apples, onions, garlic, bay leaves and thyme left to play with, I thought a savory spin on the traditional applesauce would serve as a nice accompaniment with the pork. With this in mind, I removed the bay leaves and thyme from the pan and used a potato masher to get a finer texture on the apples, onions & garlic. What's wonderful about this mixture is that it doesn't need to be seasoned since the juices and maple sugar seasoning that coated the pork have filtered down into them. Once you've mashed it to your preferred texture for applesauce, you're set! Place the savory applesauce in a serving dish or individual ramekin and garnish with a fresh thyme stem.

Maple Pecan Sweet Potatoes
We love sweet potatoes at our house, even more than the russet, white or Yukon gold variety. While we're on a fall flavor kick, I roasted some sweet potatoes and scooped out the soft flesh into a casserole dish. To add some additional sweetness, I stirred in about 1/4 cup of real maple syrup and salt to taste. Top it with chopped pecans and bake in a 350 degree oven for 20-30 minutes.

To round out our meal, I added some steamed broccoli for color and to add to our daily veggies for the day.

Thai Green Curry Chicken Filling

The following recipe was used for my Steam Buns cooking class. You can read about my class and get other links to recipes HERE.

Thai Green Curry Chicken Filling
1-2 cloves garlic, minced
1 medium onion, diced
1 tablespoon cooking oil
1/2 tablespoon Thai green curry paste
1 lb ground chicken
1 can coconut milk
1 cup bamboo shoots, julienned
1/2 cup slivered green onions
salt & white pepper to taste

In a wok or skillet, saute garlic & onions in oil.
Add curry paste and ground chicken and stir to heat.
Add coconut milk and bamboo shoots; stir. Allow the milk to reduce to half.
Remove from heat and stir in green onions, salt & white pepper. Allow to cool before using as filling.

BBQ Chicken & BBQ Pork Fillings

The following recipe was used for my Steam Buns cooking class. You can read about my class and get other links to recipes HERE.

BBQ Chicken & BBQ Pork Fillings
1.5 cups shredded chicken or diced/shredded pork
1/2 -3/4 cup bbq sauce
3 tablespoons soy sauce
1/4 cup hoisin sauce
1 teaspoon sesame oil
1-2 tablespoons fried minced garlic
salt & white pepper to taste

Combine all the above ingredients.

Mongolian Beef Filling

The following recipe was used for my Steam Buns cooking class. You can read about my class and get other links to recipes HERE.

Mongolian Beef Filling
2 bunches green onion, cut in 1 inch pieces
1 lb lean beef, sliced thin
salt & pepper to taste
1 tablespoon garlic powder
1 tablespoon onion powder
2 tablespoons cornstarch
1 onion, diced
3-4 cloves garlic, minced
1/4 cup oyster sauce
1/4 cup soy sauce

Season sliced beef with salt, pepper, garlic powder and onion powder.
Sprinkle cornstarch over beef and toss to coat. Set aside.
In hot pan saute garlic and onion in cooking oil until softened.
Add meat and brown.
Add oyster sauce and soy sauce; stir to coat.
Add green onions and toss.
Allow to cool before using as filling.

Beef & chorizo filling

The following recipe was prepared for my Tamales cooking class. You can read about my class and get other links to recipes HERE.

Beef & chorizo filling

4 lbs lean ground beef
1 pkg of beef chorizo (2 large links)
1 packet of Sazon seasoning
1 large onion, finely diced
2-4 garlic cloves, minced

In a large skillet, brown chorizo and ground beef.
Add remaining ingredients and cook through until onions have softened.
Place in bowl and allow to cool.
Cover and chill until ready to fill tamales.
