Toronto…the finale

So I told you I had fun when I was away right?  But unless you follow me on Twitter or on Facebook (Judy Chiappini) you may not know what exactly I was up to…

It was a friend of mine’s birthday and he invited me to a party at his house…

Can you believe how lucky I was to be invited to this Greek feast?  Peter single handedly prepared and served us all night long.  Paula did make the birthday cake and it is by far one of my all time faves…Lemon Meringue Cake!

We were able to meet up with Paula and Peter once again but just for a quick bite to eat after we went to the Science Center to see Harry Potter The Exhibition!  Still a little bit of time with 2 of my favorite bloggers and friends is better than no time at all…

Loved meeting Paula (xoxoxo) and Jasmine and seeing Peter again!!!  Thank you for making this a memorable trip for me and can’t wait to do it all again next year…lamb on a spit right????

Wonderfully, Amazing Morels!!!

I LOVE, LOVE, LOVE Morels!!! And I am so lucky to have an incredibly generous and busy friend like Jaden from Steamy Kitchen!!! Jaden received a box of morel mushrooms from Earthy Delights which is an absolute treasure trove of, what else – Earthy delights. You really need to check them out (they even sell fiddleheads!!!)! Seeing though as Jaden was heading out of town she offered them up to someone who was able to drive and pick them up. We decided that we would meet up for a nice lunch in Downtown Sarasota on Sunday afternoon and I would grab the morels from them there.

After a nice relaxing lunch we headed back south and home, with our box of morels. Just *giddy* we were!!!

We had already decided to have a Swiss chard and summer squash frittata with a salad for dinner and the morels fit in seamlessly. How lucky were we?

After a quick soak in some cold water, the ends cut off and butter heated in the skillet, in they went! After a quick toss around the skillet they were perfectly done and ready for us to eat. Lucky for us the girls did not like them and I sure wasn’t forcing them to eat them!

Once again thanks so much Jaden for your never-ending generosity and to Earthy Delights for providing us with that special treat!!!

Blogging friends or simply friends...

What a wonderful thing it is when the lines becomes blurred and the people that you have called your "blogging friends" turn into your real and just normal everyday friends. People you talk to everyday and end up sharing parts of your life with without ever meeting them. Does that make them any less of a friend because the distance is too far to just drive over and see them?

I guess I have proved that this weekend and I still hold onto my belief that food bloggers are some of the best people anywhere.

We were lucky enough to have Jenn (The Leftover Queen), hubby Roberto and cute puppy Pepino to stay with us for the weekend. You would think I have a ton of pictures of all of the food we made and the eating we did but sadly, no! I think we were so busy talking and just hanging out that we forgot to take pictures.

Dinner Friday night was delicious. I had marinated some Pork in Peter's Souvlaki marinade, Jenn and I made a Greek salad, bread (Artisan Bread in 5 Minutes bread), tzatziki, roasted potatoes and Jenn made some Baba Ganouche while I went and picked up the girls!

We ended up sitting up late just talking...

Saturday night we did an impromptu invite of some of my closest friends. Funny thing is they had a friend visiting them. Turned into a really fun night featuring a 25 pound pan of sausage lasagna that T. made and some good cheap wine!!! Thanks for coming Karen it was great meeting you!!!

Jenn and I were able to at least focus and start and complete our DB Challenge for the month. Look at me...almost 20 days early too!

Sunday we went to the beach and had a wonderful time just strolling and checking out several area beaches. We have some real pretty ones here!

Really I have some food posts coming up. I "splatchcocked" a chicken so stay tuned!!!

So, have you missed me?

I truly think that since I have started this blog this is probably the longest I have ever gone without posting! I can't even really tell you why I haven't, or I guess I could but who really cares (Oh, I know YOU do!).

Since I last posted I have:

Started a new job (from home but it even pays...)
Said good bye to my sister and cried for about 2 days because of it
Done the laundry, cleaned my house, grocery shopped, cooked and meal planned
Volunteered at my girl's school
Youngest started karate
Slept and not slept
prepped for my next round of visitors...Jenn (The Leftover Queen), Roberto and Pepperoncino!
that's about it...

Wait, I also got to have a play date with............Jaden of Steamy Kitchen!!! How lucky am I????

Jaden is truly an incredible person and a natural born teacher. Seeing as I have no (and I truly mean no) knowledge of Asian cooking beyond what I get served in sushi places or a Japanese Steakhouse she was kind and incredibly patient with all of my questions!

As an added bonus I got to leave with a grocery bag (no joke here!) of goods. I have jalapenos and lime leaves from her garden, tofu, noodles and some of the wonderful sauce that we made when I was there, and a plethora of other things that she so generously kept shoving in.

I have a noggin now full of photography knowledge and even some things I can do to help mine out without buying the Mother of all cameras!!! The only thing I did not get was some of that wonderful Wild Boar that they have in a cooler in their garage!!! Not yet butchered and I wasn't really up to doing that myself!

Did I get a picture of Jaden and me? Nope sadly not but she has one and will send it to me when she can and I will post it here.

What I did get was a great recipe with tons of instruction along the way! Jaden had chosen to try a recipe from Heidi of a 101 Cookbooks, granted it was heavily modified but this was the inspiration behind it...

I took this picture from the same set up as Jaden had. You should see hers. Absolutely beautiful...I have major camera envy!!!

Otsu (101 Cookbooks)

Grated zest of 1 lemon
Fresh ginger, cut into a 1-inch cube, peeled, and grated
1 tablespoon honey
3/4 teaspoon cayenne
3/4 teaspoon fine-grain sea salt
1 tablespoon freshly squeezed lemon juice
1/4 cup unseasoned brown-rice vinegar
1/3 cup shoyu sauce (wheat-free soy sauce)
2 tablespoons extra-virgin olive oil
2 tablespoons toasted sesame oil

12 ounces dried soba noodles
12 ounces extra-firm nigari tofu
1/4 cup chopped fresh cilantro
3 green onions, thinly sliced
1/2 cucumber, peeled, cut in half lengthwise, seeded, and thinly sliced
1 small handful of cilantro sprigs, for garnish
1/4 cup toasted sesame seeds, for garnish

Make the dressing by combining the zest, ginger, honey, cayenne, and salt in a food processor (or use a hand blender) and process until smooth. Add the lemon juice, rice vinegar, and shoyu, and pulse to combine. With the machine running, drizzle in the oils.

Cook the soba in plenty of rapidly boiling salted water just until tender, then drain and rinse under cold running water.

While the pasta is cooking, drain the tofu, pat it dry, and cut it into rectangles roughly the size of your thumb (½ inch thick and 1 inch long). Cook the tofu in a dry nonstick (or well-seasoned) skillet over medium-high heat for a few minutes, until the pieces are browned on one side. Toss gently once or twice, then continue cooking for another minute or so, until the tofu is firm, golden, and bouncy.

In a large mixing bowl, combine the soba, the ¼ cup cilantro, the green onions, cucumber, and about ⅔ cup of the dressing. Toss until well combined. Add the tofu and toss again gently. Serve on a platter, garnished with the cilantro sprigs and the toasted sesame seeds.


***I loved this recipe and now that I have gotten over my "fear" of Asian cooking I will be making this again and again. The ingredient list seemed so long and foreign to me but once it is broken down and explained it takes most of the intimidation out of it!!! I brought the leftovers home and my whole family was humped up over a big bowl of this just slurping away!

Why I LOVE Foodbuzz...

They bought me dinner! And I don't mean just any dinner. They bought me and about 20 of my nearest and dearest Florida food bloggers a really, really nice dinner with cocktails and wine as well!!!

This happened on Saturday night. The planning for this has been a long time coming. I think it was around the middle of June when Jenn the Left Over Queen and I first started talking about getting together with a bunch of other bloggers. About this same time Foodbuzz, being the incredible people that they are implemented a program called Dine on Us that is available to all of their featured publishers!!! We jumped right on it and Jenn took the bull by the horns and pulled this thing all together. We were even fortunate enough to have Ryan from Foodbuzz fly all the way from San Francisco to hang out with us!!!

Jenn was able to get us an incredible private room for dinner at Todd English's Blue Zoo in the Swan and Dolphin Hotel in Orlando. Good thing too...we were really loud. Everyone talking about food and then the food came and boy was it incredible!

Amuse - Clam...bacon ragout

Second Course - beet salad...candied walnuts, goat cheese fondue

Third Course - spice route char...curried beluga lentils, zhataar carrot, yogurt spill

Fourth Course - sous vide amish chicken...parmessan polenta, picholine olive, deconstructed tomato sauce

Dessert - warm chocolate cake with liquid ganache center.....maracaibo chocolate cream pudding, peanut ice cream

Just trying to get back into the swing of things...

Food Blogging is the best and Food Bloggers are even better! This is Jenn-The Leftover Queen and I in St. Augustine!

We got home late Tuesday night from our 2 week vacation of visiting family and some wonderful new found friends. Get this...not only did T. drive 2 kids and 2 dogs through the country from from south to north and then back again but, he also made time for me to meet some people that I so desperately wanted to meet!!! Isn't he the best?

I posted my last post about meeting up with Peter of Kalofagas-Greek Food and Beyond for a day when we were in Toronto. That was an incredible day that I will not soon forget but I also got to meet up the the Queen!!! The Leftover Queen that is! How lucky am I???

I have been talking to Jenn for several months now and when T. and I had firmed up our vacation plans I knew that we would be passing near St. Augustine on the 15th. I let Jenn know and she said that she would love to spend a bit of time with us on our way through.

Unfortunately we did not have the luxury of too much time and the kids were wild and the dogs were wild...But we did get to at least meet and know that we want to get to know each other better! After spending some incredibly crazy and hectic time in Jenn and Roberto's beautiful condo we decided that it would be safer and better if we took a short walk to get some of our favorite food...Gelato! Yep, they live right in the historic area of the oldest city in the nation and within walking distance to some really, really good Gelato. Pretty neat if you ask me!!! Amid some chaos we eventually made it to their favorite place and we were able to sit and talk for a bit before it was time for us to get back on the road. We still had about 5 hours to go on the journey home!

When I think about all of the wonderful people that I have made connections with through food blogging it helps me to see how blessed I am in my incredible life. If not for our like mindedness none of us would have had the opportunity to be enriched by all of these wonderful people!

I can't urge you enough to get out there and meet other food bloggers (with safety always in mind!). Maybe you think you are too shy, or too busy or it is just too inconvenient- push yourself a little and get out there and meet them. I am so glad that I did and you will be too!!! I feel that I have made 2 life long friends through this and I wouldn't trade that for the world!

Now for something completely different...Food and a recipe!!!

During our drive from here to Pennsylvania for the first leg of our trip I grabbed myself the July copy of Food & Wine. Usually I don't have time to read too many magazines but with nothing else to do besides refereeing my children's back seat battles this was a perfect chance to catch up on things to read. While I was checking out some of the articles I came across several recipes that would be great for feeding larger groups of people. I had the perfect opportunity to make one of these during our week long stay sister's beautiful house in a suburb of Toronto! Thanks Sis for putting up with us!!!

The puppy (5 mos old and the size of a horse) playing in the sprinkler! My sister's yard backs onto a beautiful ravine filled with wildlife. We saw a mother deer and her two babies just about everyday!!!

Green Bean-and-Tomato Salad with Tarragon Dressing (adapted from Food and Wine-July 2008)
ingredients
  • 2 pounds green and yellow string beans
  • 1/4 cup extra-virgin olive oil
  • 2 medium shallots, minced
  • 3 cloves garlic, minced
  • 2 tablespoons chopped tarragon
  • Salt and freshly ground pepper
  • 1 pint cherry tomatoes, halved
directions
  1. In a large pot of boiling salted water, cook the beans until just tender, about 4 minutes. Drain the beans and spread them on a large baking sheet to cool. Pat dry.
  2. In a small bowl, whisk the olive oil with the shallots and tarragon and season with salt and pepper. Place the beans and tomatoes in a large bowl, add the dressing and toss well. Transfer to a platter and serve.

MAKE AHEAD The cooked beans and dressing can be refrigerated separately overnight. Bring to room temperature before tossing.

This was such an easy salad to prepare and make ahead. I love things like this when I am cooking for people that I want to spend lots of time with!!!
