POM Cello-Rita

Remember a couple of weeks ago I posted my Cello-Rita recipe?  I had come up with the cocktail for a contest that my friend Courtney over at CocoCooks was holding and guess what?  I won!!!  Yay!  Thanks so much Courtney!  Expect to see a lot more drink recipes when I receive the book I won!!!

It’s summer and we spend A LOT of time in and around the swimming pool.  My youngest swims probably about 3 times a day sometimes more.  Here are some pictures of my youngest and our crazy Golden Retriever who really thinks he is one of the kids…

Last Sunday I was chillin’ in the pool.  A necessity in the hot and steamy days of summer here in South West Florida when T. walked out of the house carrying a nice cold drink for me!  When asked what it was he told me to guess.  I took one long sip of it and I knew instantly and it was delicious!!!

POM Cello-Rita

2 parts of Tequila El Conde Azul Blanco (or your favorite tequila)
1 part Limoncello (homemade preferably, thanks Jenn!!!) 
2 parts of your favorite margarita mix
1 part POM Wonderful (hopefully supplied to you by the generous folks at POM Wonderful!)
squeeze of lime

Shake all ingredients and serve over ice.

This is delicious with a salt rim or not. But should be enjoyed on a hot summer day either on the beach or by the pool! Bartender optional but highly recommended!

The perfect summer rum drink

It’s hot outside…I mean really hot outside. We’ve had days where it has been about 110F with the humidex calculated in. For me I can take anywhere up to 90F and then I start wilting. But I’ve found over my years of living here in Florida that some things can help.

My favorite of all is to float around in my pool with a nice refreshing cocktail fitted just perfectly into the little cup holder on the side. Try convincing the kids though that it really is to hold drinks and not all of their dive sticks I am suppose to be throwing in while relaxing! Anyway, sometimes I win and get my drink there and just recently it was this…

My Easy Rum Runner

Ingredients:

2 ounces of rum (any rum will do but I did really like this Tommy Bahama Rum)
4 ounces of Welch’s Berry, Pineapple and Passion Fruit Blend
splash of Perrier or San Pellegrino
Ice

Directions:

Mix all ingredients together in a glass and enjoy.

***We sort of thought these tasted a little like rum runners and may try them blended one day to compare!

Cello-Rita’s

My friend Courtney over at Coco Cooks is a long time fan of the Real Housewives. While I am just getting into this year I can see how it can be totally addicting. I already wish it was on more than once during the week!!! Right now we are into the Real Housewives of New Jersey but just finished out the Real Housewives of NYC. Which one has been my favorite so far? Hard to say. You some how get attached to each one for a different reason.

Anyway on with my purpose here…Courtney decided to host a Real Housewives Cocktail Contest.

This drink is for Tamra from The Real Housewives of Orange County. Seeing as her husband has started up a tequila business (Tequila El Conde Azul) I thought this recipe would be perfect to showcase their tequila!!!

Cello-Rita

2 parts of Tequila El Conde Azul Blanco (or your favorite tequila)
1 part Limoncello (homemade preferably, thanks Jenn!!!)
3 parts of your favorite margarita mix

I love lazy summer weekends!

Super Berry Limoncello Cocktail

Here in Florida once the thermometer reaches the mid 90's you don't really have too much get up and go in you so you tend to have some really lazy weekends.

Our 12th year wedding anniversary was on today and all we wanted to do was to hang out by the pool. So guess what we did? Yep and created another great Limoncello recipe.

I really do need to get making my own Limoncello!!!

Super Berry Limoncello Cocktail

2 parts Limoncello
1 part sparkling water
juice of 1 lemon
Splash of Acai Berry juice (I use the Costco brand with blueberries)

Serve over ice with a fresh lemon slice.

Limoncello Summer Cocktail

Nicely chilled bottle of Limoncello

I am always on the hunt for something that will just scream summer on the beach or by the pool...I think I found it.

My sister spent last week in Italy so I was thinking about all things Italian. With the technology now I was able to keep in touch with her the whole time. Pretty much knowing what she was eating and doing all day long! Pretty sweet huh?

It was with her in mind that I went into our liquor store the other day to buy myself a bottle of Limoncello. I had never tasted it before and thought that is was about time I did. With my bottle in hand I raced home and poured myself some to taste over ice. (very sad face) I didn't like it. But in my true determined nature I was going to find a way that this was good! And did I ever...

Here is what I came up with:


Limoncello Summer Cocktail

Pour 3 ounces of Limoncello over ice. Top with fresh squeezed lemon juice and sparkling water (Perrier or San Pellagrino) to taste.

I can't wait to serve this to my girlfriends while we waste away the afternoon around the pool watching the kids play!!! This is now my knew favorite drink...Yummmmm!!!

Onto something totally different. We are all mourning the loss of Tastespotting but some wonderful individuals have come up with some really good options! I think my favorite is Foodgawker. The set up of this one is very similar to Tastespotting. My friend Robin at Caviar and Codfish has also set one up called FPDaily. Last but not least is Recipes2Share.
