Christmas Cookie Truffles

If you've grown tired of cookies with all the many cookie swaps taking place this time of year, you're not alone. About this time, I'm pretty much cookie'd out from baking, swapping and eating! But what do you do if you have way too many cookies and everyone around you are sick of them? Here's an idea. Make some Christmas Cookie Truffles using leftover cookies or whatever cookies you like. These are a great way to enjoy those holiday cookies without having them go to waste. Besides, anything dipped in chocolate has to be good, right?!...

After awhile, holiday cookies will lose their appeal. Before you think about tossing them out, crush them, combine with cream cheeese, roll them in bite sized balls and dip them in chocolate. It's so easy, you have to try it! Inspired by the popular Oreo cookie truffles, the concept pretty much works with other cookies. I made the above platter of truffles with peanut butter cookies, chocolate chip cookies, sugar cookies and snickerdoodle cookies. What kind of cookie truffles will you be making?

Christmas Cookie Truffles
adapted from Kraft


1 pkg. (8 oz.) cream cheese, softened
1 pound of your choice of cookies, finely crushed (about 4-1/4 cups), divided
2 pkg. (8 squares each) semi-sweet chocolate, melted OR chocolate/almond bark, melted
1 cup red and/or green colored chocolate candy melts

Mix cream cheese and 3 cups cookie crumbs until well blended.

Shape into 48 (1-inch) balls. Dip in melted chocolate; place on waxed paper-covered baking sheet.

Chill 1 hour or until firm. Store in tightly covered container in refrigerator.
