Creamy Chocolate Tofu Pie

Are there any foods out there that kinda make you cringe when it's used in an unexpected way? For me, it's tofu. I use it occasionally, mostly in savory applications. I've had tofu in sweet recipes only a few times, though never made a sweet recipe using it. Well that all changed when my friend Colin made a Creamy Chocolate Tofu Pie...

Colin is a friend of mine who raved about the following dessert and I was anxious to try it out. He finally had a chance to make it and brought it over the other night - it was delicious! The tofu really lends itself to the creamy texture and with only 4 ingredients, it's a breeze to make. If you're looking for a sweet dessert that's practically guilt-free, this is one to try!

Creamy Chocolate Tofu Pie
recipe from Vegetarian Times Magazine

2 (12.3 oz) boxes Silken Extra Firm Tofu (Use only extra firm)
1 bag Chocolate Chips, melted
1 teaspoon vanilla extract
1 Graham Cracker Pie Crust, prepared (homemade or store bought)
Fresh fruit and/or whipped cream for garnish (optional)

In a food processor chop the two packages of tofu until almost smooth. Add the melted chocolate and vanilla and blend until smooth.

Remove mixture from food processor and pour into the prepared graham cracker pie crust. Chill the pic in the refrigerator for 2-3 hours to set.

Before serving, garnish with fresh fruit and/or whipped cream if desired.
