When my mom was pregnant with my younger brother, she had major cravings for baked potatoes. She just had to have a Wendy's baked potato almost every day of her pregnancy. For whatever reason, those trips to Wendy's at random times stuck with me and looking back, I appreciate Wendy's for having quite an offering of various topped baked potatoes.
What's not to love about topped baked potatoes? They're filling, have a lot of creative potential and a lot better for you than opening a frozen dinner or that infamous "blue box" of processed cheesy noodles. They're perfect when you want something quick and potatoes are pretty budget friendly too.
Here are some ways I top my baked potatoes and again, it's all about using what you have on hand. Leftovers can transform that blank potato canvas into something delicious, whether you prefer baking your potato in the oven or zapping it in the microwave. However you decide to prepare your potatoes, here are some ideas of things to make while they're cooking. Once your potatoes are done, you're ready to top them and enjoy!
Topped Baked Potatoes
Broccoli Cheese Topped Baked Potatoes: Combine 1 can of canned cheddar cheese soup [gasp! it's processed!... I normally don't buy processed foods but this happened to be in my pantry. Impulse purchase from my husband perhaps?].... and 1 package of frozen broccoli florets, thawed. Place these in a bowl and microwave it until hot. Stir and then top your baked potatoes with it. If you have leftovers, which you probably will have, save it and stir in some cooked pasta!

Southwestern Topped Baked Potatoes: Combine 1 jar of salsa, a can of sweet corn (drained), a can of black beans (drained & rinsed) and some freshly chopped cilantro. Season with salt & pepper to taste if you want and top your baked potatoes with it. If you have leftovers, you can combine it with softened cream cheese for a tasty dip with chips, top scrambled eggs or use as a filling for quesadillas, burritos or tacos.
Ham Florentine Topped Baked Potatoes: Combine 1/2 cup sour cream, 1 cup shredded swiss cheese, 1 cup chopped ham, 1/4 cup heated frozen spinach and season with salt, pepper and garlic powder if you want and top your baked potatoes with it. If you have leftovers, you can use it as a wrap sandwich filling, top pizza dough or even crepes.
