One thing I really like about The Baron is that he enjoys talking through dinner ideas and themes. I look forward to menu planning with him each week and what's more attractive about him is his willingness to help prepare our meals together. Needless to say, we've been a great team in the kitchen! This particular dish was The Baron's idea - something I immediately agreed to since blue cheese was involved. If you aren't a fan of blue cheese, feel free to substitute it with your favorite cheese or omit the cheese completely. The beauty of this recipe is that you can adapt it to your tastes and it allows the freedom to add other ingredients. I served this topped with caramelized onions and mushrooms, but that was just an additional topping. Feel free to omit or top as you'd like.
Blue Cheese Hamburger Steaks
recipe adapted from The Neelys
recipe adapted from The Neelys
1 1/2 pounds ground beef sirloin {80/20}
1 tablespoon Worcestershire sauce
1/2 teaspoon liquid smoke
1 shallot, finely chopped
1 clove garlic, finely chopped
3 tablespoons finely chopped parsley leaves
1/2 teaspoon garlic powder
1/4 cup crumbled blue cheese
Kosher salt and freshly ground pepper
1 tablespoon canola oil
1 tablespoon butter
1/2 cup beef stock or broth
Preheat the oven to 350 degrees F.
Combine the ground beef, Worcestershire, liquid smoke, shallots, garlic, parsley and salt and pepper, to taste, in a large bowl. Shape the mixture into 6 equal-sized oval patties and set aside on a plate.
Heat a large frying pan over medium heat and add the canola oil and butter. When the butter foams add the patties and brown, about 4 to 6 minutes per side. Transfer the patties to a 13 by 9-inch baking dish and add the beef stock.
Cover with aluminum foil. Bake in the preheated oven until the meat is tender and slightly pink in the middle, about 10-15 minutes. Remove the dish from the oven and serve.
