You'll be surprised how quickly this dish comes together. In fact, I was running behind in the kitchen as my friends showed up and I ended up preparing this after they arrived. It literally took minutes! After seasoning and browning the beef, the blue cheese sauce comes together pretty quickly. I served this alongside a colorful and fresh summer chopped salad and herb roasted corn on the cob. This has been one of my favorite meals I made recently and I'm looking forward to making it again!
Beef Tenderloin Tips with Blue Cheese Sauce

1 1/2 pounds beef tenderloin tips, cut into 1 inch pieces
salt and pepper to taste
steak seasoning to taste (I use Urban Accents)
3 tablespoons vegetable oil
2 shallots, halved and sliced thin
1/2 cup low sodium chicken broth
1/2 cup heavy cream
1/2 cup crumbled blue cheese (Danish blue)
2 tablespoons minced fresh chives
Pat steak tips dry with paper towels and season with salt, pepper, steak seasoning. Heat 1 tablespoon oil in large skillet over medium high heat until just smoking. add steak tips and cook until browned all over and cooked to desired doneness. Transfer to platter and tent with foil.
Add remaining oil, shallots and a pinch of salt to the empty skillet and cook until softened. Stir in broth, cream and any accumulated beef juices and simmer, scraping up any browned bits, until slightly thickened. Off heat, whisk in blue cheese and chives. Pour sauce over beef tips and serve.
