Homage to My Papaya Friend...

My friend Steph and I met online. A few months later, she came to visit with her husband. Four months after that, we went on a long weekend girls getaway. And since then, we've been there for each other through some very trying times and shared our moments of joy. Currently Steph's known as my "papaya friend" since she's expecting and the baby is about the size of a papaya! We have about 5-6 hours drive between us but each month we send packages of fun goodies to make up for not being there in person.

So today happened to be one of those fabulous days I came home to a package sent by Steph. She sent me the Winerd board game I've been eyeing for while (personal tidbit: I collect and enjoy board games that are food related!) and she also sent me a cookbook I've thought about purchasing myself.

This post is dedicated to Steph and in honor of her and our friendship, I made a recipe from the cookbook she sent me, The New Best Recipe. What recipe did I choose? Well, Blackberry & Lemon Cream Scones of course! Thank you Steph for being such a great friend :)

I took the book's recipe for Cream Scones and put my twist on it by adding fresh blackberries and lemon zest. The end result was a light, fluffy, creamy and perfect scone bursting with blackberries and a nice hint of lemon.

Here's my adapted recipe for Blackberry & Lemon Cream Scones, inspired by Cook's Illustrated's The New Best Recipe: 2 cups (10 oz) unbleached all purpose flour
1 tablespoon baking powder
3 tablespoons sugar
1/2 teaspoon salt
5 tablespoons cold unsalted butter, cut into 1/4 inch cubes
2 teaspoons lemon zest
3/4 cup fresh blackberries, halved
1 cup heavy cream

1. Adjust an oven rack to the middle position and heat the oven to 425 degrees.

2. Place the flour, baking powder, sugar and salt in a large bowl. Whisk together.

3. Using a pastry blender or your fingertips, quickly cut in the butter until the mixture resembles coarse meal with a few slightly larger butter lumps.

4. Add lemon zest and stir until thoroughly incorporated.

5. Stir in the heavy cream with a rubber spatula or fork until the dough begins to form, about 30 seconds.

6. Add the halved blackberries (or whole if they are small) and gently fold into the dough so that the blackberries are evenly distributed throughout.

7. Gather the dough and all dry flour bits and press the dough into an 8 inch cake pan, then turn the dough out onto a lightly floured work surface. With a sharp knife or bench scraper, cut the dough into 8 wedges.

8 Bake until the scone tops are light brown, 12 to 15 minutes. Cool on a wire rack for at least 10 minutes. Serve warm or at room temperature.

Adult Autism Residential Care

One of, if not the least, discussed autism topics is the issue of residential care for autistic adults. It is more difficult to talk about some of the negative realities that await autistic persons, particularly those who are severely autistic or low functioning, those who will not be able to care for themselves or live independently. Even mentioning the need for secure residential care for those autistic persons who require 24/7 supervision can bring ridiculous allegations of "writing off autistics".

It is refreshing to see news of someone actually doing something positive to address the residential care needs of autistic adults. In International expert opens specialist home for people with autism Caring Business reports on a a new residential home for autistic adults in Rotherham in the UK. The home was opened by Dr Olga Bogdashina who is reported to have done extensive research into sensory-perceptual and communication problems in people with autistic spectrum disorders.

Dr Bogdashina stressed the importance of providing support throughout their life – not just when they are young. ‘All too often, people with autism receive support during childhood, but when they mature and reach adulthood, they are forgotten,’ she said. ‘We have to remember that autistic children grow up. That is why it is essential to have facilities like Rother Heights – so they can receive the necessary care and support they still need in adult life.’

Rother Heights can accommodate 24 residents in four bungalows, which are designed with the personal needs of each resident in mind. The interior of each bungalow is decorated to stimulate the senses and includes coloured inset lighting, tactile and durable furniture and furnishings and unique architecture. The centre also includes a number of safety features, such as remotely controlled light and water supplies and Perspex window coverings. The home is run by Autism Care (UK) Limited, part of the Maria Mallaband Care Group.

There is a glaring need for adult autism facilities like the Rotherham center in many jurisdictions. New Brunswick has absolutely NO autism specific residential care facilities. Examples like the Rotherham center are helpful reminders of the options that could be put in place if we care enough and have the will to provide a decent life for our more severely autistic adults.

OMG: I Got CRABS.

Yep. You read right. I got crabs today... and my husband loved it. But first, let me provide some background...

We hit up the asian market today out in the suburbs and wow, what a difference in prices. Normally we shop in the neighboring suburbs since the prices are more afforable than in the city where we live. However this time, we went further out to get some new scenery. I'm so glad we did. Some of our awesome buys include:

- strawberries for $.99/lb
- blackberries for $.99/pkg
- blueberries for $1.79/lrg pkg
- peaches for $.69/lb
- plums for $.99/lb
- broccoli crowns for $.49/lb
- yellow onions for $.39/lb
- red onions for $.49/lb
- green onions @ 4 bunches/$1.00
- vine tomatoes @ $.79/lb
- shallots @ $.79/lb
- seedless cucumber @ $.79 each
- seafood mix for $1.99/lb
- vegetable dumplings for $2.99 @ buy one get one free
- boneless, skinless chicken breast @ $1.49/lb
- fresh, live blue crabs @ $1.49/lb

... and so much more! We left there with a trunk full of fresh produce, seafood and meats all for less than $90. We're set for quite a while. So back to my crabs. My husband jumped at the chance to have fresh live crabs for dinner. In fact, he made dinner tonight and it was pretty darn good. It's been quite some time since I got messy with a pile of steamy hot crabs so it was a fun dinner. Here's a little pictorial of how he prepared our crabs:

and 15-20 minutes later, dinner is served!

While he steamed the crabs with the Chesapeake Bay seasoning, parsley and salt & pepper to taste, I roasted some corn in the oven and made a fresh fruit salad with some of the fruit we purchased.

MFEAT welcomes to Manitoba Dr. Leif Sigurdson and his wife Dr. Leanne
van Amstel, parents of a child with Autism Spectrum Disorder (ASD) and
medical migrants from Nova Scotia. As reported by CTV News last Sunday
the family made the drastic decision to leave their careers in Halifax
to access treatment for their three-year-old son, who was diagnosed
with ASD a year ago. Their son will receive 35 hours of therapy per
week in St. Amant's Applied Behavioral Analysis (ABA) program. It is
unfortunate the family felt forced to relocate for sake of their
child, but as Manitoba residents they will finally have access to the
treatment their child needs to develop, while the province also gains
two highly specialized medical professionals.

The disruption in the lives of this new Manitoba family is the reality
facing many families caring for a child with ASD across Canada. While
ASD is a serious neurologic condition of unknown cause, decades of
studies have demonstrated that 25-35 hours of ABA per week
significantly improves the cognitive and communicative function of
children receiving it. The American Academy of Pediatrics, in its 2007
Clinical Report on managing ASD has written, "The effectiveness of
ABA-based intervention in ASDs has been well documented through 5
decades of research ... Children who receive early intensive behavioral
treatment have been shown to make substantial, sustained gains in IQ,
language, academic performance ...".

Jamie Rogers, MFEAT's Director of Communications can relate to the
cross-country move made by the family, "When our two boys were
diagnosed with ASD in BC in 2005 we were facing a debt of $80,000 per
year to secure 35 hours of ABA per week. So we decided to move to
Winnipeg to enrol in St Amant's program. We learned of other
out-of-province families in the program who waited tens of months
without services following diagnosis or who were offered nothing at
all. We are grateful to MFEAT for fighting to get the St Amant
Pre-School ABA program in place, which has paid off enormously for our
kids. No parent of a child with another serious medical condition has
to move provinces or go bankrupt to obtain treatments that are proven
effective, so why those with ASD? There is a Senate Standing Committee
Report telling the government that families with an ASD child in this
country are in a crisis that needs a national response, but it
collects dust while our children and families endure major hardships."

Founded in 1997, MFEAT is an advocacy and support group for families
with a child, sibling, or loved one diagnosed with Autism Spectrum
Disorder - a neurological condition that affects 1 in 150 children and
has no known cure. Following years of negotiation with MFEAT, in 2002
Manitoba introduced a permanent pre-school ABA program for Manitoba
families, the only one of its kind in Canada. MFEAT successfully
convinced the Manitoba Government to implement a school-age ABA
program, which was announced in June.

Leftovers Aren't So Bad...

One of our staple dishes I resort to whenever we have leftovers is fried rice. It's a dish that we make to use up leftover veggies and meats we have on hand... and the rice we use is always cold. That's key for perfect fried rice, just like what you'd get at Chinese restaurants and how my parents made theirs for their catering business. Here's my recipe for fried rice:

1 cup leftover meats - pork, chicken, beef, seafood
1-2 eggs
3-4 cloves minced garlic
1/2 onion finely diced
3-4 tablespoons vegetable oil
1 cup chopped vegetables (fresh or frozen)
salt & pepper to taste
1/2 tablespoon onion powder
1/2 tablespoon garlic powder
1-2 tablespoons light or dark soy sauce
1-2 cups prepared rice, cold (or day old)

In a hot skillet or wok, heat oil.
Add garlic and onions & stir.
Add leftover meats of your choice, chopped up in bite sized pieces.
Stir fry meats until you get them a bit crispy.
Push the meats aside and crack eggs into the pan.
Scramble the eggs into the pan until cooked.
Add cold rice over the eggs & meat into the pan, making sure to crumble it in your fingers. (Dumping a large chunk of rice is not going to work here. You need to crumble it so it separates nicely).
Add salt, pepper, onion & garlic powders and soy sauce; toss.
Allow the rice to heat up and absorb the spices and soy sauce, tossing to help it along.
Add the fresh or frozen veggies and toss into the rice.
Continue cooking it all on high heat until rice is heated through and veggies are cooked.

I used leftover grilled chicken and some frozen veggies for lunch and served this with some homemade eggrolls - which I'll be dedicating a whole post to in a couple of week. I'm teaching an eggroll class so I'll save the details and recipes on making eggrolls then!

Talk Radio Network Nonsense

Talk Radio Network shock jock Michael Savage has been rightly vilified for his hateful comments about autistic children calling them "brats, idiots, and morons." What is equally appalling, and equally asinine, is the statement offered up in defense of Mr. Savage by his syndicator Talk Radio Network:

"The network is satisfied that he did not mean any disrespect to autistic children or their families, but was, instead, reiterating his longstanding concerns on public health issues."

How is calling autistic children brats, idiots and morons NOT disrespectful? How is spewing such hateful remarks "reiterating concerns on public health issues"?

Talk Radio Network's defense of Savage is nothing more than cow manure.

All disrespect intended.


Happy Meat!

Not the prettiest cuts but it sure tasted great!!!

I know you've all probably heard me on my soap box about the tainted meat that we are being forced to eat from the supermarkets. All the meat that is pumped full of atibiotics and hormones to allow the animals to grow at a speed very unatural to them. I think I stopped eating meat from the "big guys" around February. I have found several ways around it...costly, yes, but I think that buy eating less meat but a higher quality meat (happy meat) we are seeing extra benefits from it. Quality or quantity is what we are going for here.

A couple of months ago the CSA that I belong to (Worden Farms) sent out an email about beef shares that you could buy into through Crescent C Ranch. All of their beef is grass fed, no hormones or antibiotics, free range beef. I finally talked T. into after about 3 months with no beef. We decided to just get a small order of about 20 lbs where we would get 30 % steak, 30% roasts and 40% ground beef, just to try it out to see if this was the route we wanted to go.

We picked up our order on Saturday and were we ever excited. We also opted to buy some left over meat that didn't get packaged up. So we bought 5 packs of rib steaks and she asked if we wanted any liver...I jumped at that and she threw in 3 livers for no cost!!! I had just bought a new cookbook and wanted to try out a recipe that was in it so it was very good timing!!!

Saturday night we were having souvlaki. That was already planned but on Sunday it was steak night!!! We wanted the full flavor of the steak so we only salted and peppered it and threw it on the grill. We served it with a simple tomato mozzarella salad and the meal was incredible in it's simplicity!!! They are going to be doing another order come the fall so if anyone in the area wants some info on this just email me for it!

Michael Savage Recommended For Dolthood

I haven't said too much about Michael Savage and his ridiculous rant against autistic children and their parents. His comments clearly identified him as a windbag and a blowhard that knows nothing about autism. His attack was so absurd that I did not feel the need to protest or go after his job.

From what I understand Mr. "Savage" has attacked other groups Muslims, gays etc and will undoubtedly find an outlet somewhere in the US talk radio/television hate talk business to spew his hatred.

Having said that I enjoy reading of the loss of advertisers for his program and the protests. Of the many comments about Savage's silly hate spiel though one I enjoyed most is the title and remarks in an article by Dr. Phillip Leveque on Salem-News.com: Autism, Michael Savage and Dolthood.

"(MOLALLA, Ore.) - When I heard this dolt pontificating on television news that Autism was the result of bad parenting, I nearly threw-up. This totally absurd ranting was settled more than 50 years ago."

Sir Michael Savage, Dolt of the NTR, pretty well sums it up.


Peter's Souvlaki Rocks!

Yummmmm...

I have always loved souvlaki. Growing up in Toronto we had many, many Greeks around us so we were able to get some really good stuff. Since moving here we have 3 Greek restaurants run by 2 different people. Not a whole lot of variety. At one I really like the Greek Salad but their tzatziki sucks. The other one's tzatziki is great but their Greek Salad is bad! And unfortunately their souvlaki is pretty flat. I like mine full of flavor so just imagine how happy I was when Peter of Kalofagas - Greek Food and Beyond, finally posted his Souvlaki recipe!!!

I had some trouble finding pork to do it with but I was finally able to get my hands on some good pork steaks (no hormones or antibiotics etc.). I marinated them all of Friday night and Saturday. T. could not wait to get into this! Can't hardly blame him. It was incredible. The best I have ever had. We had it with some nice crusty bread and tzatziki sauce (bought from the restaurant that has good stuff. I know it's easy but I had no time!).

Thanks again Peter!!! I wouldn't change a single in this recipe it was absolutely perfect!!!


Pork Souvlaki

1 boneless pork butt (shoulder)
1 medium onion, grated
3 cloves of garlic, minced
1 heaping tsp. salt
1 heaping tsp. black pepper
1/4 vegetable oil
1 heaping tsp. dried Greek oregano
wooden skewers (soaked overnight)

  1. Trim excess fat from your pork butt and cut into uniform pieces.
  2. In a large bowl, add your remaining marinade ingredients along with the pork pieces and toss to mix and coat all the meat. Place in the fridge for at least 5 hours and for best results, overnight.
  3. Place your wooden skewers in a shallow baking dish that's filled with water. Allow the wooden skewers to soak overnight (so they don't disintegrate when grilling).
  4. The next day, a couple of hours before you are going to grill your souvlaki, allow the pork to come to room temperature and then start skewering your meat (it's easier when your meat's at room temperature).
  5. Pre-heat your gas grill (or prepare your charcoal grill) and when you have a medium-high heat, grill your souvlakia for 3-4 minutes a side and then keep warm until all the souvlaki are cooked.
  6. Squeeze fresh lemon juice on your souvlakia with a sprinkle of fine sea salt and dried Greek oregano.
  7. Serve with some crusty bread and Tzatziki.

Autism and Mortality Rates

In Mortality Rates in Autism Nestor L. Lopez-Duran Ph.D. , child psychologist, neuroscience researcher and blogger ( Autism Research Blog: Translating Autism) comments on a study examining an important and seldom discussed aspect of autism - mortality rates. Parents don't like to think about their child's life span and the likelihood that it will be shorter than that of the general population - or their own. I know I don't.

Mortality Rates in Autism is Lopez-Duran's review of Mouridsen, S.E., Bronnum-Hansen, H., Rich, B., Isager, T. (2008). Mortality and causes of death in autism spectrum disorders: An update. Autism, 12(4), 403-414. DOI: 10.1177/1362361308091653. He mentions a number of surprising facts disclosed by the Mouridsen et al study which suggests that autistic people, particularly autistic women, die much sooner than the general populaton.

What also struck me was the statement that "The cause of death commonly reported among the cohort with ASDs was epilepsy." My son does not have an epilepsy diagnosis but he does exhibit behavior which appears to me, as a layperson, to reflect epileptic behavior, including physical energy surges which cause him to become rigid and make growling noises, and the increasingly frequent rolling of his eyes back in his head. The possibility of epilepsy in addition to autistic disorder has been more in my mind of late and the thought that it could be a major cause of premature death of autistic persons is unsettling.

St. Amant and the Need for a REAL National Autism Strategy

In Autism treatment attracts family CTV reports the story of two doctors, Dr. Leif Sigurdson, a reconstructive surgeon, and his wife Dr. Leanne van Amstel, a radiologist. who are moving their family from Nova Scotia to Winnipeg so that their autistic son can access Applied Behavioral Analysis treatment at the Winnipeg's St. Amant program. As described on its web site:

St. Amant is a comprehensive resource for Manitobans with a developmental disability, acquired brain injury and autism. A non-profit corporation, St. Amant offers a wide range of programming, services and care to support individuals with a developmental disability, acquired brain injury or autism and their families.

Services include a large main residence, more than 50 community sites and homes, a research centre, a school and a daycare. Among other services, St. Amant offers an effective program for children with autism and for families who care for an individual with a developmental disability at home.

The Harper Conservatives, instead of dealing with Canada's Autism Crisis, have simply staged a national "Autism Symposium". It was a bad joke, postponed initially to avoid participation by parents advocating for funded ABA treatment for their children. The Symposium was nothing more than an effort to downplay ABA through carefully selected participants and a "facilitated" (directed) discussion. The American Academy of Pediatrics Management of Children with Autism Disorders report released the week before the Symposium, exhaustively researched and professionally written, highlighted the overwhelming body of evidence in support of the effectiveness of ABA in treating autism and put to shame the bogus National Autism Symposium staged by the Harper Conservatives.

The Sigurdson/van Amstel family is not the first to move across Canada seeking effective, ABA treatment, for an autistic child. While Stephen Harper, Tony Clement and Mike Lake run away from Canada's autism crisis, many families who are informed, and able to relocate, are going where effective evidence based treatment is available for their autistic children. In the case of the Sigurdson/van Amstel family Nova Scotia loses two medical professionals they can sorely afford to lose.

Canada's National Autism Crisis is directly affecting the autistic children being deprived of effective treatment solely because of where there families live. In some cases it is also resulting in the loss of essential medical resources for local communities.

Pineapple Shortcakes w/Creme Anglaise

The following recipe was prepared during my Summer Grilling cooking class. You can read about it and check out the other recipes I made for the class HERE.

Grilled Pineapple Shortcake w/Creme AnglaisOne of my favorite fruits is pineapple. Because of its high sugar content, especially when ripe, they are great on the grill. I was inspired by taking the idea of strawberry shortcakes and using pineapples in place of the berries. To save time, I didn't make the biscuits from scratch so I used biscuits from a tube (the horror!) I used a bottled caramel sauce and my friend Harv made the creme anglaise.

Here is my recipe for Pineapple Shortcakes w/Creme Anglaise:

1 pineapple, rind removed and sliced into rounds
1 tube of prepared buttermilk biscuits (or homemade)
2-3 tablespoons turbinado sugar
Creme anglaise (I don't have Harv's recipe for this yet, but you can use your own recipe.
Caramel sauce, prepared (you can use ice cream topping too)
whipped cream or even vanilla ice cream.

Prepare the biscuits as directed. Before baking, sprinkle turbinado sugar over the tops.
On a medium high heat grilled, place pineapple slices and grill with open lid.
Turn the pineapple slices when grill marks appear and the natural sugars begin to caramelize.

To plate, place a sugar topped biscuit on your serving dish and top with a couple slices of grilled pineapple.
Drizzle caramel sauce over the top and serve along size a dollop of creme anglaise, ice cream or whipped cream.

Grilled Corn on the Cob w/Spice Butter

Grilled Corn on the Cob w/Spice Butter
There are quite a few ways to grill corn. Today, I removed the husk and silks from the corn and cut them in half for cobbettes. To make it easier to grill, I wrapped each piece of corn in foill. Each of my guests each had a tablespoon of butter to add their choice of spices and seasonings to create their own spiced butter that they would use with their corn. Its a great way for your guests to get involved! They had the choice of using the butter on their corn before of after it was grilled.

Grilled Vegetable Couscous Salad

The following recipe was prepared during my Summer Grilling cooking class. You can read about it and check out the other recipes I made for the class HERE.

Grilled Vegetable Couscous Salad
I wanted to serve up a filling salad that would also be great as a main entree for those that want a meatless meal. This salad takes grilled vegetables, couscous and a balsamic vinaigrette together fora light dish and requires little work.

Here's my recipe for Grilled Vegetable Couscous Salad:
2 cups prepared couscous
1 bunch aspagarus, bottoms trimmed
3 portabello mushrooms
4 roma tomatoes, halved
1 yellow squash, halved lengthwise
2 zucchini, halved lengthwise
1 red bell pepper, halved & seeded
1/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
1 tablespoon spice mix
1 lemon, juiced

Lightly toss vegetables in a drizzle of extra virgin olive oil, salt and pepper to taste.
Place on medium high heat grill and grill until slightly charred. Vegetables will cook at different times so keep a look out on these as they cook.
When vegetables are cooked, remove from grill and coarsely chop into bite sized pieces.
Toss all grilled vegetables and prepared couscous in a large serving bowl.
To make the dressing, combine the olive oil, balsamic vinegar, spice mix (you can use whatever you'd like) and drizzle over couscous and vegetables.
Squeeze a whole lemon over couscous & toss to combine.
Grate a nice hard italian cheese, such as parmesan over the couscous salad and serve.

Bobby Flay's recipe for 16 Spice Chicken

The following recipe was prepared during my Summer Grilling cooking class. You can read about it and check out the other recipes I made for the class HERE.

Spiced Two Ways
For the chicken drumsticks, I rubbed them with spices and seasonings as I did with the pork chops. However the 16 Spice Chicken is a recipe of Bobby Flay's. Combine the following spices together and coat boneless skinless chicken breasts and grill as you would the pork chops above.

Here is Bobby Flay's recipe for 16 Spice Chicken:
3 tablespoons ancho chile powder
3 tablespoons pasilla chile powder
3 tablespoons ground cumin
3 tablespoons ground coriander
3 tablespoons ground ginger
2 tablespoons garlic powder
2 tablespoons onion powder
1 tablespoon allspice

Pork Chops Three Ways

The following recipe was prepared during my Summer Grilling cooking class. You can read about it and check out the other recipes I made for the class HERE.

Pork Chops Three Ways
For my center, thick cut pork chops, I did nothing more than coat them in various rubs, spices and seasonings. In fact, when I buy meats in bulk, I'll take a few pieces and coat them with rubs/spices, place in a freezer bag and freeze for future meals. For these chops, I coated them with a Bell Pepper & Herb rub, BBQ rub and Greek rub.

Coat your pork chops with your preferred mix of spices and seasonings.
Before grilling, your chops should be at room temperature.
Place chops on a medium high heated grill and grill with closed lid.
No need to turn the chops more than once.
Turn chops when they are grilled, roughly 5-7 minutes, depending on thickness.
Chops will be medium when the center is slightly soft when pushed.
Befor cutting, allow your chops to rest so juices can redistribute.

Margherita Pizza

The following recipe was prepared during my Summer Grilling cooking class. You can read about it and check out the other recipes I made for the class HERE.

Margherita Pizza
This dish was gobbled up before I could take a picture! They loved how easy it was to make and versatile it was to top with anything they wanted.

1 ball of prepared pizza dough (I used Trader Joe's brand)
1 log fresh mozzarella cheese, sliced into rounds
2-3 ripe fresh roma tomatoes, sliced
handful of fresh basil leaves
2 tablespoons extra virgin olive oil
1-3 cloves of garlic, minced

On a medium high heat grill, oil the grates well with olive oil.
Take your pizza dough and stretch out into a freeform shape to form a crust.
Carefully place on oiled grill grates and grill with closed lid for about 4-6 minutes.
When the bottom of the crust is browned and baked up, remove from grill and place grilled side up.
Top grilled size of crust with a drizzle of the 2 tablespoons of extra virgin olive oil.
Sprinkle minced garlic over olive oil.
Arrange mozzarella slices all over the pizza, along with the tomato slices.
Sprinkle the top with dried oregano.
Top the pizza with fresh basil leaves.
Return pizza to the grill and grill with closed lid until bottom is browned and cheese is melted.

Soya Aloo Ki Sabji
(Fresh Dill and Potatoes dry Curry)

Potatoes 1 large or two medium chopped
Fresh Dill/soya 1/2 bunch cut fine
Ginger 1/2 ” piece minced or grated
Green chilli 1 cut fine
Oil 1 tsp.
Asafoetida 1/4 tsp.
Cumin seeds/ Jeera 1/2 tsp.
Turmeric powder/ haldi 1/2 tsp.
Red chilli powder 1/4 tsp.
Coriander powder/Dhaniya 1/2 tsp.
Dry mango powder/ amchur 1/2 tsp.
Garam Masala 1/4 tsp.

A cast iron skillet is great to cook potatoes in. It gives the potatoes a great crust which makes the dish delicious, so use it to cook the potatoes in if you can. Heat the skillet and add oil. Add asafoetida, cumin seeds, turmeric powder, red chilli powder and coriander powder to the oil.
When you hear the sizzling sound, add the green chilli and ginger. Saute briefly for 30 seconds and then add the potatoes and the dill. Reduce the heat to medium low and cover the skillet. Let it cook like that for 15-20 minutes till the potatoes look like they are done. You can stir a couple of times in between.

Lastly add dry mango powder and the garam masala. Mix well with a light hand. And soya aloo ki sabji is ready. This makes a fabulous side dish, whether with lentil soup or even a spicy curry. Its delicious to just snack on them too:). Tastes great with rotis, paranthas or even rice.

Grilled Pizza

2 frozen pizza doughs (thawed in fridge overnight)
1 can pizza sauce
1 red bell pepper
1/4 red onion
3 cloves of garlic
1 bunch fresh basil
2 cups shredded mozzarella cheese

Prep all ingredients so that everything is ready for the pizzas to be assembled.
Cut the pepper and onion into thin strips.
Mince the garlic.
Roughly tear the basil (or roll together in a bunch and make thin slices for basil confetti).
Preheat the grill to medium high.
Spray the grill with cooking spray(carefully) or drizzle the dough with olive oil.
Place the dough on grill.Allow to grill for about one minute, or until the first side has a few grill marks.
Flip dough over, and begin to assemble pizza.
I added the sauce, onion, garlic, peppers, cheese, and some of the basil.
Grill until the cheese had melted.
Make sure to check the bottom of the crust to make sure it isn't burning.
Remove from grill and sprinkle with the remaining basil.


Grilled Lemon & Garlic Marinated Pork Chops

2 center cut thick pork chops boneless
3 tbsp lemon juice fresh
3 tbsp minced garlic
2 tbsp Italian seasonings rub: Oregano, basil, parsley, etc…Great mix
s and p to taste
2 tbsp evoo

Throw everything into a bag or bowl. Mix and cover. Marinate for 2 hours or as long as overnight. I did 5 hours.
Heat grill to medium. Put chops on and grill about 5-10 mins each side depending on thickness. Serve warm with grilled veggies and fresh seasonal fruit..we used grilled corn, peas and chilled watermelon!

Grilled Marinated Kabobs

1 chopped onion
1 cup honey
1/2 cup teriyaki sauce
2 tbsp chili powder
1/3 cup Tabasco sauce
1 tsp salt
1 cup sugar
the juice from 1 lemon
2 fresh peppers
4 large boneless chicken breasts chopped into 1 inch cubes
skewers

Mix the ingredients minus peppers, onion and chicken, in the blender for 30-50 seconds, or until well blended. Add all to a bowl and mmarinate the shish kabobs in the refrigerator for 6 or more hours. Once marinated, load up kabob skewers to your liking, and grill for about 10-15 mins per side or until chicken is completely cooked. Serve with grilled corn on the cob and fresh, chilled watermelon!


Cilantro Lime Halibut w/ Mexican Squash and Beans

4 filets of fish (Halibut, Mahi Mahi or Swordfish work best here)
4 tablespoons extra virgin olive oil
1/3 cup chopped fresh Italian parsley
1/2 cup chopped fresh cilantro
Juice of 1 lemonJuice of 1 lime
1 tablespoon of Tabasco sauce
2 chili peppers, chopped finely
1 teaspoon cumin
1 teaspoon chili powder
Salt and pepper to taste

Rinse you fish filets in cold water, pat them dry and season with salt and pepper. Set them aside on a platter while you combine all the remaining ingredients. You can use a food processor if you like, but I found it just as easy to chop everything up.

Once your marinade is ready, plunk your fish down in the sauce, cover with plastic wrap and let sit for 15 to 20 minutes. Try not to let it sit for too long because the citrus will begin to "cook" the fish. Preheat your outdoor grill or grill pan and spray with cooking spray or brush with olive oil. Place your well marinaded fish filets on the grill. Pour a little marinade over the filets and close the grill cover. After about 3-4 minutes, depending on thickness, flip your filets. Pour some marinade down on the other side and allow them to finish cooking for 2 to 3 minutes. Remove from grill and serve over Mexican Squash and Beans.

Mexican Squash and Beans

2 small zucchini, cut into discs
2 small yellow squash, cut into discs
1 green pepper, cut into slices
1 vidalia onion, cut into slices
1 large tomato, cut in large chunks2 ears of corn (or you can use frozen corn kernels if you want)
5 tablespoons olive oil
2 teaspoons cumin
2 teaspoons chili powder
1 can of black beans, drained
2 jalapeno peppers, chopped
3 cloves of garlic, chopped
salt and pepper

After you've chopped up the zucchini, squash, pepper, onion and tomato place in a large mixing bowl. Cover with three tablespoons of the oil and a teaspoon each of the cumin and chili powder. Season generously with salt and pepper and stir to coat all the vegetables with the spices and oil. Peel the ears of corn, rub with olive oil and sprinkle lightly with salt and pepper. Preheat your grill.

Dump your vegetables into a grill pan on the grill. If you don't have a grill pan you can use a foil pan. Place your ears of corn directly on the grill. Close the lid and allow the vegetables and corn to cook for about 5 minutes. Keep an eye on them, lift the lid to stir the vegetables and turn the corn. The corn will start to yellow, as it softens and browns up slightly you can remove your ears. Once they cool you can cut the kernels off and mix with your finished vegetables. Once your vegetables are cooking to desired doneness, remove them from the grill.

Coriander Pepper Pork Chops

2-4 boneless porkchops
2 cloves garlic, crushed
1 T. coriander seeds, crushed
1 T. coarse black pepper
1 T. brown sugar
3 T. soy sauce
3 T. Olive oil

Whisk together olive oil and soy sauce in a medium bowl. Add garlic, coriander seeds, pepper, and brown sugar. Whisk together to blend. Place pork chops in dish. Marinate for 30 minutes. Remove the chops from the marinade and broil, pan broil, or grill for 10-15 minutes, turning occassionally. Juices should run clear and chops should be tender and juicy.

JS's Savory Chicken Wings

1 tsp five-spice powder
2 tsp garlic powder
4 tbsp ground coriander
1 cup soy sauce
2 tbsp brown sugar
1 tsp black pepper
1 tsp minced ginger
1 tbsp sesame oiljuice of
1 lime
4 lbs chicken wings

Combine all ingredients together (except chicken) and whisk. Pour over chicken wings and marinate for at least 4 hours or overnight.Cooking method can vary.
I baked them in the oven for 35-40 minutes at 350 degrees, then finished them off at the grill. Alternatively, these can bake for the 45 minutes, broiled at the end for a charred finish. Of course, you can also cook them totally on the grill.

Basil Mozzarella Burgers

For the burgers:
1 pound ground beef
1 cup shredded mozzarella
1/4 cup chopped fresh basil
About a tablespoon balsamic vinagrette dressing

Combine all ingredients and form into 4 patties. Place on heated grill pan. Cook for about 5 minutes on each side. Turn and cook for 3 more minutes. Serve with Basil Mayonnaise and Tomato Salsa.

Basil Mayonnaise:
2 cups mayonnaise
1 cup fresh basil leaves
Salt and pepper

Place all ingredients in a blender. Puree until smooth.

Tomato Salsa:
2 tomatoes, chopped
1 medium onion, chopped
1/2 cup pimento olives, chopped (I omitted.)
2 cloves garlic, minced
1 tablespoon red wine vinegar
3 tablespoons olive oil
Salt and pepper

Combine all ingredients in a bowl. Let stand for 30 minutes.

Teriyaki Kabobs

Marinade:
1/3 cup soy sauce
2 tablespoons vegetable oil
1 tablespoon brown sugar
1 garlic clove, minced
1 teaspoon ground ginger
1 teaspoon seasoned salt
1 1/2 pounds boneless beef sirloin steak, cut 1 1/4 inch cubes ( I am sure boneless, skinless chicken breasts would also work well)
Kabobs:
1 small pineapple, cut into 1 1/2 inch cubes
1 large onion, cut into wedges
Other veggies that might be good: Mushrooms, tomatoes, red and or green bell pepper

In a bowl, combine soy sauce, oil, brown sugar, garlic, ginger and salt; mix well. Pour half of the marinade into a large resealable plastic bag or shallow glass container; add beef and turn to coat. Seal or cover; refrigerate for 4-8 ours, turning occasionally. Cover and refrigerate remaining marinade.

Drain the meat, discarding the marinade. On metal or soaked bamboo skewers, alternate meat, onions and pineapple. Grill, uncovered, over medium heat for 3 minutes on each side.
Baste with reserved marinade. Continue turning and basting for 8-10 minutes or until meat reaches desired doneness.

Grilled Peach Melba w/Marscapone

Grilled Peach Melba w/Mascarpone
I love how abundant peaches have been this week at my local market. Using this to my advantage, I made this dish on the grill. It's not only easy but the colors of the dish are beautiful.

Here is my recipe for Grilled Peach Melba w/Marscapone:
1-2 large ripe peaces, halved
1 small tub of marscapone cheese
raspberry coulis (purchased or prepared)
fresh mint for garnish

On a medium high heat grilled, place peach halves and grill with open lid.
Turn the peaches when grill marks appear and the natural sugars begin to caramelize.
To plate, place the peach half on a plate and add a small scoop of marscapone cheese in the well where the pit was.
Drizzle with either a purchased or prepared raspberry coulis and garnish with fresh mint.

The Two Autism Faces of Pierre Poilievre

Pierre Poilievre is yet another of what seems to be an abundant supply of MP's in the Conservative Party of Stephen Harper who, while in opposition presented one face on the need for inclusion of autism treatment in Medicare, then wore another face once the Harper Conservatives formed the government. When it comes to federal financing of autism treatment for Canadians with autism Conservative MP Pierre Poilievre (Nepean—Carleton, CPC) has presented two decidedly different faces.

Autism FACE # 1 - Opposition MP Pierre Poilievre

While serving in opposition Conservative Party MP Pierre Poilievre was quite happy to use the cause of autistic children to bludgeon the Liberal government of the day as he did in the House of Commons on October 5, 2005.

Mr. Pierre Poilievre (Nepean—Carleton, CPC): Madam Speaker, I rise today with honour to introduce petitions on behalf of constituents in my riding who wish to see the government finally show some leadership in seeking a national framework that would see autism treatment covered by health insurance as part of an overall universal health care system.

The government has deliberately excluded families, who have children with autism, from health coverage, and as a result middle class families are stuck with $40,000 health bills year after year. Members across the way do nothing about it.

Today I proudly introduce a petition calling for some action and calling for some fairness.

Poilievre

Once again, a member of Stephen Harper's Conservative Party has been willing to wear two autism faces. On October 5 2005 , Pierre Poilievre, wearing Autism Face # 1, while sitting as an opposition MP, rose in the House of Commons, to chastise the Liberal government of Paul Martin for excluding familes, who have children with autism, from health coverage, and as a result sticking middle class families with $40,000 health bills year after year. Mr. Polievre ripped "Members across the way do nothing about it."

Then on February 21, 2007, wearing Autism Face # 2, now sitting as an MP and Parliamentary Secretary in the governing Conservative Party Mr. Poilievre voted NAY , he voted against, the Private Members' bill of MP Shawn Murphy which, if passed, would have required the federal government to do exactly what Mr. Polievre had previously crticised a different federal government for failing to do.

Pierre Poilievre now a "member across the way", sitting in government, has done exactly what he criticised the Liberals for doing - he has helped perpetuate the exclusion from medicare coverage of treatment for autistic children.

Pierre Poilievre you are a hypocrite.

Δύο φορές έχει «συναντηθεί» ο Γ. Ζορμπάς με τη Siemens. Και οι δύο υπήρξαν κρίσιμες για την καριέρα του: Η πρώτη ήταν το «καυτό» καλοκαίρι του 1995, με την υπόθεση των συμβάσεων ΟΤΕ με Siemens και Ιντρακόμ, και του είχε αφαιρεθεί βιαίως η δικογραφία των ψηφιακών.
Κατά τρόπο μοιραίο, 13 χρόνια μετά, όταν συνάντησε πάλι τις συμβάσεις του ΟΤΕ με τη γερμανική εταιρεία, αποπέμπεται και αυτή τη φορά κατά βίαιο τρόπο
από τη θέση του επικεφαλής της Αρχής κατά του ξεπλύματος βρόμικου χρήματος.Τώρα, πάντως, φέρεται αποφασισμένος να κλιμακώσει την αντίδρασή του και να αποστείλει, πιθανότατα την Τρίτη, επιστολή προς τον ίδιο τον πρωθυπουργό με την οποία θα καταγγέλλει ότι του αφαιρείται η έρευνα για τη γερμανική εταιρεία.


*Με δήλωσή του στην «Κ.Ε.» απαντάει και στην Εισαγγελία του Αρείου Πάγου περί των αιτημάτων δικαστικής συνδρομής, που κατηγορείται ότι δεν έστειλε, και στις αιτιάσεις περί ολιγωρίας του.«Τα αιτήματα δικαστικής συνδρομής», ανέφερε μιλώντας μας στο προαύλιο του Προεδρικού Μεγάρου την Πέμπτη, «τα υποβάλλει η δικαστική αρχή, σύμφωνα με το νόμο (αρθρ. 457-461 ΚΠΔ) και τις συμβάσεις διεθνούς συνεργασίας. Εξ ουδεμίας διατάξεως νόμου προβλέπεται ότι υφίστατο δυνατότης διαβιβάσεως αιτημάτων δικαστικής συνδρομής εκ μέρους της Αρχής σε χώρες της αλλοδαπής, ούτε δυνατότης δεσμεύσεως τραπεζικού λογαριασμού σε πιστωτικά ιδρύματα ξένων χωρών».


Τα συναπαντήματα με τη Siemens


Ο πρώην εισαγγελέας ήταν ουσιαστικά προ των πυλών όχι μόνο της υπόθεσης Siemens, αλλά και όλων των άλλων σκανδάλων που προβάλλονται στα πρωτοσέλιδα και δεν έχουν διαλευκανθεί. Αφορμή για τις ενέργειες που επρόκειτο -αλλά δεν πρόλαβε- να κάνει, ήταν αναφορές που είχε λάβει η Αρχή από ελληνικές τράπεζες για λογαριασμούς προσώπων τα οποία βρίσκονται στο μικροσκόπιο και της δικαστικής έρευνας για το σκάνδαλο της γερμανικής εταιρείας και στη χώρα μας.


*Δύο πράγματα δεν είναι γνωστά στον κόσμο γι' αυτή την υπόθεση: Το πρώτο είναι ότι την υπόθεση του σκανδάλου της Siemens είχε αναλάβει πριν από μήνες συγκεκριμένο μέλος της Αρχής με εντολή Ζορμπά και το δεύτερο ότι ο εισαγγελέας ενημερωνόταν συχνά με σημειώματα από την Εισαγγελία του Μονάχου για τη δίκη ενός από τους πρωταγωνιστές του γερμανικού σκανδάλου, του Ρ. Σίκατσεκ. Οσοι παρακολουθούν από κοντά το ενδιαφέρον της Αρχής για τη Siemens είναι απολύτως βέβαιοι ότι μόνο λόγοι ευπρέπειας τον απέτρεψαν να ενεργήσει, έστω και την περασμένη εβδομάδα, δεσμεύοντας λογαρισμούς πρωταγωνιστών.


*Οι δραστηριότητες της Siemens στην Ελλάδα είναι γνωστές στον εισαγγελέα από τη δεκαετία του 1990, όταν με πόρισμα-φωτιά κατακεραύνωνε τι μίζες, όπως τις ανέφερε, που διοχετεύονταν σε στελέχη του Οργανισμού. Τότε είχε προτείνει να ανατεθεί η υπόθεση στο εφετείο, κάτι που αρνήθηκε ο τότε προϊστάμενός του δύο μέρες πριν συνταξιοδοτηθεί. Ακολούθησε η δυσμενής μετάθεσή του στα Γιάννενα.


*Κατά μία ακόμα μοιραία συγκυρία, ο Γ. Ζορμπάς γνώριζε πολύ καλά και εκ των έσω ένα άλλο σκέλος του σκανδάλου, τη σύμβαση του υπουργείου Αμυνας για τα συστήματα ασφαλείας των Ολυμπιακών με την αμερικανική SAIC, που είχε ως υπεργολάβο τη γερμανική εταιρεία. Είναι κοινό μυστικό ότι ο πρώην εισαγγελέας, ως γενικός γραμματέας Εξοπλισμών του υπουργείου Αμυνας, παραμονές των Ολυμπιακών είχε εντοπίσει το παράνομο της σύμβασης, αφού είχε την άποψη ότι το υπουργείο Δημόσιας Τάξης είχε αρμοδιότητα για την σύναψη της σύμβασης. Τότε, μάλιστα, σύμφωνα με κύκλους του υπουργείου Αμυνας, σε σύσκεψη στην οδό Μεσογείων, παρουσία του τότε υπουργού Σπ. Σπηλιωτόπουλου, αλλά και άλλου υπουργού (εν ενεργεία σήμερα), είχε δεχτεί την εισήγηση να επεκταθεί η σύμβαση για την ασφάλεια του «2004» και σε άλλα μέσα μαζικής μεταφοράς και είχε διατυπώσει την έκπληξή του.


Το πόρισμα για τα ομόλογα


Ο διορισμός του Γ. Ζορμπά ως επικεφαλής της Αρχής έγινε τον Μάιο του 2006. Είχε προηγηθεί συνάντησή του με τον πρωθυπουργό.


*Ωστόσο, έκτοτε δεν υπήρξε καμία επικοινωνία με τον Κ. Καραμανλή. Το πάγωμα των σχέσεών του με την κυβέρνηση, και ιδιαίτερα με τον Γ. Αλογοσκούφη, ήρθε μετά τα πορίσματά του για την υπόθεση των ομολόγων το 2007, όπου διατύπωνε την άποψη ότι χρήματα κατευθύνθηκαν σε συγκεκριμένο πολιτικό χώρο. Τότε συγκρούσθηκε και με τον εισαγγελέα του Αρείου Πάγου, Γ. Σανιδά, ο οποίος αμφισβήτησε τη νομιμότητα και των δύο πορισμάτων.


*Ακολούθησε η έρευνα του για τα 5,5 εκατ. ευρώ του Θ. Αναστασιάδη και η υπόθεση Ζαχόπουλου. Σήμερα μαθαίνουμε ότι ο πρώην εισαγγελέας είχε ζητήσει από την ΥΠΕΕ το πόρισμα για τους φορολογικούς ελέγχους του Θ. Αναστασιάδη, το οποίο του εδόθη μόνο έπειτα από επεισόδια και τελική γνωμάτευση της Εισαγγελίας Πρωτοδικών. *Υπάρχουν πολλοί που επιμένουν ότι η υπόθεση με την οποία επρόκειτο να ασχοληθεί στη συνέχεια ήταν η υπόθεση της εξαγοράς της «Γερμανός» από την Cosmote. Δεν πρόλαβε, όμως, αφού η προαναγγελθείσα καρατόμησή του ήρθε νωρίτερα από τον Αύγουστο, οπότε την περίμεναν ορισμένοι.

*Οταν ρωτήθηκε, πάντως, στη Βουλή την περασμένη εβδομάδα για τα επόμενα βήματά του, είπε ότι θα επιστρέψει στο σπίτι του στην Καλλιθέα. Φαίνεται ότι θα ασχοληθεί με τη συγγραφή του βιβλίου του για την «δίκη των έξι», αφού είναι γνωστό το ενδιαφέρον του για την Ιστορία και για τα αρχαία κείμενα.
