October Tasty Tools: Dutch Oven Round Up!

For October's Tasty Tools, we're highlighting Dutch Ovens! This is one piece of cookware I must have because of the versatility it offers. This is the time of year I tend to use it more often because it's such a great vessel to make soups, stews, roasts, and casseroles. Tonight we had another couple over for dinner. It's amazing that despite living within a mile from each other, we all haven't gotten together in almost a whole year! Sauteed Spinach w/Baconoriginal Joelen recipe1-2 packages fresh baby spinach leaves5 slices canadian bacon, diced3 cloves garlic, sliced2-3 tablespoons buttersalt & pepper to taste1/2 cup low sodium chicken brothIn a saute pan, melt butter and saute garlic and bacon.When bacon is crisp, add chicken broth and spinach; toss until it wilts.Serve immediately.

Spicy Garlic Mashed Potatoesoriginal Joelen recipe1 head garlic, cut in half horizontallyolive oil for drizzlingsalt & pepper to taste1-2 tablespoons spice garlic & onion seasoning2-3 large Russet baking potatoes2 tablespoons butter1/2 cup half & halfPreheat oven to 350 degrees.Tear off a sheet of foil (about 8x12 inches).Place garlic halves onto the foil.Drizzle with olive oil and season with salt & pepper.Wrap the garlic & jalepenos into a foil packet and place in preheated oven.Bake for 30 - 45 minutes; set aside to cool.Meanwhile, boil a pot of water and add chopped potatoes.Cook potatoes until softened and drain.Place potatoes

Nova Scotia's Behavioral Therapy Program Works ... For Those Autistic Children Who Receive It

The Chronicle Herald reports that a Nova Scotia government early intensive behavioral intervention program works .... for those autistic children fortunate enough to receive it. The program was evaluated by Isabel Smith, a researcher based at the IWK Health Centre. She evaluated 27 children who completed a year of treatment as part of the early intensive behavioural intervention program:She found all of them had significantly improved communication skills. Mr. Long, Lean and Lanky Visits the Pediatrician

Conor visited the pediatrician today for a review. No pressing health issues; Conor just hadn't been to see him for awhile. While we waited for the doctor an assistant measured Conor's weight, 134 lbs, and height 5 feet 8 1/2 inches.Conor's autism issues have been a challenge. But he has been blessed with excellent physical health and likes to keep moving. Over the last year he has had a major growth spurt.
