Balmain Bugs Salad with Mango Dressing


I learned about a new crustacean, Balmain Bugs, when searching for Australian recipes! Balmain bugs are a type of slipper lobster, commonly found off the coast of Australian and New Zealand. I prepared the following recipe using langostinos instead (since Balmain bugs are a bit challenging to find here) and the langostinos had a slight flavor of lobster. The dressing was both sweet and had a nice kick of heat as well. This definitely had raves and no leftovers either!


Balmain Bugs Salad with Mango Dressing
recipe adapted from Recipeland

1 package of langostinos, cooked & chilled
fresh spinach
1/2 cup grape tomatoes, halved

Mango Sauce:
2 medium mangoes
2-3 tablespoons sour cream
1/2 tablespoon lime juice
1 teaspoon brown sugar
2-3 teaspoons Thai sweet chili sauce

Allow your langostinos to thaw and come to room temperature; set aside.

Prepare the mango dressing by peeling one of the mangoes, removing the seed and roughly chopping the flesh. Place the chopped mango in a food processor. Add the remaining ingredients. Process for 20-30 seconds or until smooth. Refrigerate, covered until ready to assemble. If the sauce is too thick, add a little extra sour cream or lime juice. Chop of the other mango and set aside.

To serve, place a bed of spinach on your serving platter. Top with langostino and chopped fresh mango. Drizzle the mango sauce over the top.
