Honey Ginger Carrots

Carrots aren't just for bunny rabbits, contrary to the images floating around during the Easter holidays. In fact, I tend to have them as a staple in my kitchen since they make a great healthy snack. Another great way to enjoy them is as a side dish, which was a perfect addition to my Easter dinner. This colorful vegetable side dish, Honey Ginger Carrots, brings together sweet baby carrots and a honey ginger butter glaze that makes you wonder why you don't eat carrots more often!...

 If you're like me, you enjoy raw carrots with ranch dressing. But another flavor profile that works well with carrots is honey and ginger. The honey highlights the natural sweetness of carrots and a pinch of ground ginger add a little bite. This is a side dish that adds a pop of color to your dinner table and it won't be hard to encourage even the pickiest vegetable eaters to enjoy them!


Honey Ginger Carrots
recipe from AllRecipes

1 pound baby carrots, sliced
1/4 cup butter
2 1/2 tablespoons honey
1 pinch ground ginger
1 tablespoon lemon juice, or to taste
1 tablespoon fresh parsley, minced for garnish


Bring a pot of water to a boil. Add carrots and cook until tender but still firm, about 5 minutes. Drain.


In a large skillet over low heat, melt butter with honey. Stir in ground ginger and lemon juice. Stir in carrots and simmer until heated through.
